Description

This chocolate Bundt cake is a real insider tip! I've been making it for a while and it's always a hit. What's special about this cake is the use of mayonnaise, which makes it incredibly moist. The cocoa provides an intense chocolate note, which is enhanced by the dark chocolate. Perfect for birthdays or just with coffee. The preparation is straightforward and succeeds with the Thermomix® in no time. An absolute must for all chocolate lovers!

Ingredients (10 ingredients)

  • 250 g Wheat flour Type 405
  • 75 g Baking cocoa
  • 1 tsp Cream of tartar baking powder
  • 0.25 tsp Baking powder
  • 1 Prise(n) Salt
  • 3 piece Eggs (size M)
  • 200 g Sugar
  • 1 Pck. Bourbon Vanilla Sugar
  • 200 g Mayonnaise
  • 50 g Dark chocolate

Preparation (6 steps)

Mix dry ingredients

Thermomix® Setting
10 sec/Speed 4

Add 250 g wheat flour type 405, 75 g baking cocoa, 1 tsp cream of tartar baking powder, 0.25 tsp baking powder and 1 pinch of salt to the mixing bowl and mix for 10 sec/speed 4.

Beat eggs, sugar and vanilla sugar

Add 3 eggs (size M), 200 g sugar and 1 pack. Bourbon vanilla sugar into the mixing bowl and whisk for 3 min/speed 4 until frothy.

Stir in mayonnaise

30 sec/Speed 3

Gradually add 200 g mayonnaise through the lid opening and stir for 30 sec/speed 3 until smooth.

Stir in flour mixture

Thermomix® Setting
40 sec/Speed 3

Add the flour mixture from step 1 in portions and stir in for 40 sec/speed 3. If necessary, push down from the edge with the spatula.

Chop and fold in chocolate

Coarsely chop 50 g of dark chocolate. Pour the dough into a greased Bundt cake pan (24 cm) and carefully fold in the chopped chocolate.

Bake

Pour the dough into a greased Bundt cake pan (24 cm) and bake in a preheated oven at 200 °C top/bottom heat (180 °C fan oven) for 40 minutes. Let cool and serve sprinkled with powdered sugar.
