Description

This hearty lentil stew with sausages and spätzle, prepared in the Thermomix®, is the perfect comfort food for cold days. The main ingredients are brown lentils, sausages, spätzle, and fresh soup vegetables, refined with tomato paste and onions. In just 55 minutes, the Thermomix® creates a savory main course for 4 servings. Ideal as a warming family meal or for anyone who likes it hearty.

Ingredients (14 ingredients)

  • 1 Liter Vegetable or meat broth
  • 8 Stück Vienna sausages/thin sausages
  • 400 g Spätzle or Knöpfle
  • 250 g Brown lentils, light brown
  • 250 g Soup vegetables uncleaned (celeriac, carrots, leek, parsley)
  • 2 EL Tomato paste
  • 1 Stück Red onion (approx. 80 g)
  • 40 g Butter
  • 20 g Flour - Type 405
  • 2 Stück Bay leaves
  • 1 TL Marjoram, dried
  • 1 EL Balsamic vinegar
  • 1 TL Salt
  • 1 Prise Black pepper

Preparation (10 steps)

Prepare soup vegetables and onion

Clean, peel, and wash 250 g of soup vegetables. Peel 1 red onion (approx. 80 g). Cut the carrot and celery into very small cubes. Clean, wash, and cut the leek into fine pieces. Wash and shake the parsley dry. Wash 250 g of brown lentils in a sieve if desired.

Chop vegetables

Place onion, carrot, and celery in the mixing bowl and chop for 5 sec./speed 5. If necessary, push down with the spatula.

Sauté vegetables

Add 40 g of butter and sauté for 3 min./120°C/speed 1.

Prepare roux

Add 20 g of flour Type 405 and sauté for 1 min./100°C/speed 2.

Add lentils and broth

Thermomix® Setting

Add the remaining chopped vegetables (leek), the 250 g brown lentils, 2 tbsp tomato paste, 1 tsp dried marjoram, and 2 bay leaves. Add 1 liter of vegetable or meat broth and stir for 5 sec./speed 3.

Simmer lentils

Thermomix® Setting
35 min/212°F/Speed 1 100 Reverse

Close the mixing bowl and simmer for 35 min./100°C/speed 1 in reverse rotation. If necessary, add some water through the lid opening.

Season lentils

Test the lentils. When they are cooked, season everything with 1-2 tbsp balsamic vinegar, about ½ tsp salt, and freshly ground black pepper. Remove the bay leaves. Finely chop the parsley and stir in.

Heat sausages

Thermomix® Setting
5 min/176°F/Gentle stir speed 80

Place 8 Vienna sausages/thin sausages (4 pairs) on the finished lentil vegetables and heat with the lid closed for 5 min./80°C/Soft Stirring.

Prepare Spätzle

Meanwhile, let the 400 g spätzle or Knöpfle steep in a separate pot in boiling salted water for 1 minute. Then drain and stir in 1 tsp of butter flakes.

Serve

Serve the lentil vegetables with sausages and spätzle.
