Description

The gourmet chicken pan is a hearty main course with chicken, vegetables and a creamy sauce. The dish is easy to prepare and is ideal for a quick lunch or dinner. The preparation time is about 50 minutes and the recipe is designed for 4 servings. Ideal for the whole family.

Ingredients (15 ingredients)

  • 2 tsp Vegetable spice paste
  • 600 g Chicken breast fillet, in pieces
  • Salt
  • Pepper
  • 200 g Carrots, in oblique slices
  • 200 g Mushrooms, in slices
  • 500 g Potatoes, in cubes
  • 200 g Peas (frozen)
  • 1 piece Onion, halved
  • 1 piece Garlic clove
  • 1 tbsp Olive oil
  • 200 g Cream
  • 1 tbsp Tomato paste
  • 1 tbsp Mixed herbs (frozen)
  • 2 tbsp Starch

Preparation (4 steps)

Prepare chicken and steam vegetables

Thermomix® Setting
25 min/Varoma/Speed 2 Varoma

Add 700 g water and 2 tsp vegetable spice paste to the mixing bowl. Distribute 600 g chicken breast fillet in pieces in the Varoma and season with 1 tsp salt and ½ tsp pepper. Spread 200 g carrots in oblique slices and 200 g mushrooms in slices on the insert. Insert the simmering basket and weigh in 500 g potatoes in cubes. Place the closed Varoma on top and steam everything for 25 Min./Varoma/speed 2. Add 200 g peas (frozen) to the insert in the last 5 min. After the cooking time, carefully remove the Varoma. Remove the simmering basket using the spatula. Collect the cooking liquid.

Chop and sauté onion and garlic

Thermomix® Setting
2 min/248°F/Speed 1 248°F

Put 1 onion, halved and 1 clove of garlic in the mixing bowl and chop for 5 Sec./speed 5. Push down with the spatula. Add 1 tbsp olive oil and sauté for 2 Min./120°C/speed 1.

Prepare sauce

Thermomix® Setting
6 min/212°F/Speed 2 212°F

Add 200 g cooking liquid, 200 g cream, 1 tbsp tomato paste, 1 tbsp mixed herbs (frozen), 1 tsp salt and 3 pinches of pepper and mix for 5 Sec./speed 5. Simmer the sauce for 6 Min./100°C/speed 2. Stir 2 tbsp starch with 4 tbsp water until smooth and pour in during the last minute.

Finish

Add potatoes, vegetables and chicken, mix with the spatula. Arrange on plates and serve garnished with chives.

The gourmet chicken pan is a real classic in our home. I got it years ago from a friend who was always looking for simple but nutritious dishes for her family. Since then, I have adapted and refined it again and again until it was as we love it today. It is a dish that radiates warmth and security, perfect for a cozy evening. The secret of this pan lies in the combination of ingredients. The chicken breast fillet, cut into bite-sized pieces, provides a tender and protein-rich base. The carrots, in oblique slices, bring a slight sweetness and a crunchy bite. The mushrooms, in slices, contribute an earthy, almost meaty taste. The potatoes, in cubes, make the dish filling and give it a pleasant texture. And the peas, which are added shortly before the end, provide a fresh, green note. The preparation in the Thermomix® is very simple. Steaming in the Varoma is ideal for gently cooking the chicken and vegetables and preserving the flavors at the same time. It is important that the chicken is not too close together so that the steam can circulate well. The cooking liquid that is created during steaming is the basis for the sauce and should definitely be collected. When sautéing onions and garlic, make sure they do not turn brown, otherwise they may taste bitter. The starch used to thicken the sauce should definitely be mixed with cold water to avoid lumps. For a vegetarian version, the chicken can be replaced with tofu or halloumi. If you like it vegan, you can use a plant-based alternative instead of cream and replace the chicken with a mixture of different vegetables such as zucchini, peppers and eggplant. There are no limits to the imagination when it comes to spices. Curry powder, paprika powder or a pinch of chili give the pan a special touch. The gourmet chicken pan is best served warm, directly from the Thermomix®. A fresh salad or a piece of bread go perfectly with it. If you like, you can garnish the pan with fresh herbs such as chives or parsley. The gourmet chicken pan can be prepared well. The vegetables can be cut the day before and stored in the refrigerator. The sauce can also be prepared and stored in the refrigerator. Before serving, only the potatoes, vegetables and chicken need to be cooked and the sauce heated up. Leftovers of the pan can be stored in the refrigerator and reheated the next day. They then taste almost even better, as the aromas have been able to develop even better.
