Description

Dieses würzige Hühnerragout mit Quinoa und Bohnen ist ein absolutes Soulfood! Ich mache es gerne, wenn es draußen kalt ist und ich etwas Herzhaftes brauche. Die Chipotle-Paste gibt dem Gericht eine angenehme Schärfe, die perfekt mit der Süße der Tomaten harmoniert. Die Quinoa macht das Gericht sättigend und die Bohnen liefern eine extra Portion Proteine. Es ist super einfach zuzubereiten und eignet sich hervorragend zum Vorkochen. Ein Klecks Joghurt dazu und fertig ist ein leckeres und gesundes Mittag- oder Abendessen. Ingredients (12 ingredients)

  • 1 tbsp olive oil
  • 1 piece onion
  • 2 piece red peppers
  • 3 tbsp chipotle paste
  • 2 can chopped tomatoes
  • 4 piece skinless chicken breasts
  • 140 g quinoa
  • 2 cube chicken stock cubes
  • 1 can pinto beans
  • 1 bunch coriander
  • 1 piece lime
  • 1 tbsp sugar

Preparation (7 steps)

Onion and Peppers

Add 1 onion, cut into quarters, and 2 red peppers, roughly chopped, to the mixing bowl and chop for 3 Sec./Stufe 5.

Sauté Vegetables

Add 1 tbsp olive oil to the mixing bowl and sauté for 3 Min./120°C/Stufe 1.

Add Chipotle Paste and Tomatoes

Thermomix® Setting
1 min/212°F/Speed 1 100

Add 3 tbsp chipotle paste and 2 x 400g cans chopped tomatoes to the mixing bowl and cook for 1 Min./100°C/Stufe 1.

Add Chicken and Water

Thermomix® Setting
20 min/212°F/Speed 1/Linkslauf 100 Reverse

Add 4 skinless chicken breasts and one can-full of water to the mixing bowl. Cook for 20 Min./100°C/Stufe 1/Linkslauf.

Cook Quinoa

In a separate saucepan, bring water to a boil with 2 chicken stock cubes. Add 140g quinoa and cook according to package directions. Add 1 x 400g can pinto beans for the final minute of cooking. Drain well.

Shred Chicken

Remove the chicken breasts from the mixing bowl and shred with two forks. Set aside.

Finish Stew

2 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the shredded chicken, 1 tbsp sugar, chopped coriander and juice of 1 lime to the mixing bowl. Season with salt and pepper to taste. Cook for 2 Min./100°C/Stufe 1/Linkslauf.
