Description

This hearty pointed cabbage and potato stew with Mettenden sausage is a savory main course, perfect for warming you up, especially in the cold season.   • 600 g Pointed Cabbage
  • 1000 g Potatoes
  • 1 EL Clarified Butter
  • 1 l Meat Broth
  • 4 Stück Mettenden
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • nach Geschmack Cumin

Preparation (6 steps)

Chop onions

Place 2 onions in the mixing bowl and chop for 3 sec./speed 5. If necessary, scrape down the sides with the spatula.

Sauté onions

Add 1 tbsp clarified butter to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare cabbage and potatoes

Halve 1 pointed cabbage (approx. 600 g), remove the stalk and cut into strips. Peel and dice 1 kg potatoes. Cut 4 Mettenden into slices. Set aside.

Cook stew

Thermomix® Setting
20 min/212°F/Speed 1 100

Add the cut pointed cabbage, diced potatoes and 1 l meat broth to the mixing bowl. Simmer for 20 min./100°C/speed 1.

Add Mettenden

Thermomix® Setting
10 min/212°F/Speed 1 100

Add the Mettenden slices and simmer for a further 10 min./100°C/speed 1.

Season

Season the stew with salt, pepper and cumin and serve.
