Description

This venison roast in red wine sauce is a feast for the senses! I especially like to make it in the autumn and winter when it's cold outside and you want something hearty on the table. The venison roast is first seared and then braised in an aromatic red wine sauce with lingonberries. The meat becomes incredibly tender and the lingonberries give the sauce a slightly sweet note. It goes well with pretzel bread dumplings or potato dumplings. A dish that makes an impression on any festive table!

  • 1 Stück Venison Roast
  • 2 Stück Shallot(s)
  • 2 Stück Carrot(s)
  • 0.25 Knolle/n Celery
  • 1 Bund Thyme
  • 1 Rosmarinzweig(e) Rosemary
  • 2 Stück Garlic clove(s)
  • 2 Stück Clove(s)
  • 1 Stück Chili pepper(s)
  • 1 Flasche Red wine
  • 1 Liter Game stock or beef stock
  • Sauce thickener
  • 1 EL Lingonberries from a jar
  • 0.5 Stück Lemon(s) (grated zest)
  • 0.5 EL Powdered sugar
  • 1 EL Tomato paste
  • Salt
  • Pepper
  • 0.5 TL Coriander seeds
  • Fat for frying

Preparation (7 steps)

Chop shallots, carrots and celery

Place 2 shallots, 2 carrots and 0.25 knob of celery in the mixing bowl and chop for 5 sec./speed 5. Scrape down with the spatula.

Sauté vegetables

Add fat for frying to the mixing bowl and sauté for 3 min./120°C/speed 1.

Roast powdered sugar and tomato paste

Add 0.5 tbsp powdered sugar and 1 tbsp tomato paste and roast for 2 min./120°C/speed 2.

Deglaze with red wine and reduce

Thermomix® Setting
3 min/Varoma/Speed 1 Varoma

Deglaze with some red wine (approx. 100 ml) and reduce for 3 min./Varoma/speed 1 without the measuring cup. Repeat this 3-4 times.

Add spices and remaining ingredients

Add 1 bunch of thyme, 1 sprig of rosemary, 2 cloves of garlic, 2 cloves, 1 chili pepper, the remaining red wine, 1 liter of game stock or beef stock, salt, pepper, 0.5 tsp coriander seeds and 0.5 lemon zest to the mixing bowl and simmer for 5 min./100°C/speed 1.

Simmer sauce

Close the mixing bowl and simmer the sauce for 3 hours 50 min./95°C/speed soft/Reverse.

Season and thicken the sauce

Thermomix® Setting
2 min/212°F/Speed 2 100

Season the sauce with 1 tbsp lingonberries from the jar and, if necessary, thicken with sauce thickener to taste. For this, 2 min./100°C/speed 2.
