Description

This fish Parmentier hash is an original and tasty way to enjoy cod. The combination of broccoli and potato purees provides a unique texture and taste. I love preparing this dish for a family dinner because it is both simple to make and full of flavor. Baking in the oven with a little grated cheese and breadcrumbs makes it irresistible. Ingredients (12 ingredients)

  • 600 g cod loin
  • 500 g potatoes
  • 500 g broccoli
  • 50 g butter
  • 50 ml white wine
  • 100 ml Milk
  • 1 bunch parsley
  • 2 piece shallots
  • 1 pinch Fine salt
  • 1 pinch Pepper
  • 50 g Grated Emmental
  • 2 tbsp Breadcrumbs

Preparation (5 steps)

Cooking the potatoes and broccoli

25 min/Varoma/Speed 1 + 10 min/Varoma/Speed 1 Varoma

Peel 500 g of potatoes, cut them in half and place them in the steamer basket. Fill the Thermomix bowl with 700 ml of water. Insert the steamer basket and cook the potatoes for 25 Min./Varoma/Stufe 1. Meanwhile, place 500 g of frozen broccoli in the Varoma. After 25 minutes, add the Varoma to the steamer basket and cook for another 10 Min./Varoma/Stufe 1.

Preparing the fish

Thermomix® Setting

Peel and slice 2 shallots. Arrange them in a microwave or oven dish. Wash and finely chop 1 bunch of parsley. Place 600 g of cod loin on the shallots, add the chopped parsley, salt, pepper and 50 ml of white wine. Cover the dish and cook 3 Min./keine/Stufe 1 in the microwave.

Mashed potatoes

Thermomix® Setting
20 sec/Speed 4

Remove the cooked potatoes from the steamer basket and place them in the Thermomix bowl. Gradually add milk (about 100 ml) until a fairly firm consistency is obtained. Add 25 g of butter, salt and pepper. Mix 20 Sek./Stufe 4.

Broccoli puree

Thermomix® Setting
20 sec/Speed 5

Remove the cooked broccoli from the Varoma and place it in the Thermomix bowl. Add 25 g of butter, salt and pepper. Mix 20 Sek./Stufe 5.

Assembly and gratin

In the dish containing the fish, spread the broccoli puree evenly, then cover with the mashed potatoes. Mix 50 g of grated cheese with 2 tablespoons of breadcrumbs and sprinkle over the top of the dish. Bake in a preheated oven at 180°C for about 15 minutes, until the gratin is golden brown.
