Description

This papered fish with shrimp Guerrero style is a simple and delicious recipe, perfect for a quick and healthy meal. The fish, marinated with Worcestershire sauce, lemon and mustard, is steamed in aluminum foil along with fresh shrimp and a tomato and habanero pepper sauce that gives it a spicy and tasty touch. I usually prepare it in summer, when the ingredients are fresher and juicier. It is a dish that always triumphs at home and that is prepared in the blink of an eye! Ideal for a light dinner or a festive meal.

Ingredients (9 ingredients)

  • 1.5 kg fish in fillet, of snapper or the one of your preference
  • 0.5 kg small precooked and clean shrimp
  • 1 Chorrito Worcestershire sauce
  • 0.5 piece Lemon
  • 1 Chorrito Mustard
  • 1 piece HojaSanta (can be substituted with any aromatic herb I recommend basil)
  • 1 al gusto Salt to taste of Grain or Sea
  • 0.25 cup Tomato sauce or red Tomato for cooking not the chili one
  • 0.25 cup habanero pepper sauce

Preparation (6 steps)

Marinate the fish

In a bowl, place the fish fillets and season with sea salt to taste. Add a splash of Worcestershire sauce, a few drops of lemon juice and a few drops of mustard. Mix well with your hands so that the fish is well impregnated with the flavors.

Prepare the aluminum foil

Cut a large piece of aluminum foil, approximately 10 cm larger on each side than the size of the fish.

Flavor the aluminum foil

Place a holy leaf (or basil) in the center of the aluminum foil.

Assemble the fish and shrimp

Place the marinated fish on the holy leaf. On top of the fish, distribute the precooked and clean shrimp. Pour the tomato sauce and habanero pepper sauce over the shrimp.

Seal the aluminum foil

Cover with another piece of aluminum foil and seal the edges well, folding the ends to prevent steam from escaping.

Steam in the Varoma

Pour 500 ml of water into the Thermomix glass. Place the Varoma with the papered fish on top. Cook 20 Min./Varoma/Stufe 1. Verify that the aluminum foil has inflated, which indicates that the fish is cooked.
