Description

This oat flakes bread is a hearty and healthy bread, ideal for breakfast or as a snack. It is rich in fiber and protein and is easy to prepare in the Thermomix®. The preparation time is approx. 160 minutes, including baking time. The bread is vegetarian and vegan.

Ingredients (8 ingredients)

  • 180 g Oat flakes
  • 170 g Nut mix
  • 130 g Seeds (e.g. sunflower, pumpkin)
  • 90 g Ground flaxseed
  • 20 g Quinoa or chia seeds
  • 11 g Psyllium husks
  • 2 TL Salt
  • 300 ml Warm water

Preparation (8 steps)

Mix ingredients

Put oat flakes, nut mix, seeds, ground flaxseed, quinoa/chia, psyllium husks and salt in the mixing bowl and mix for 20 sec./speed 3.

Add water and stir

Add warm water and stir for 30 sec./speed 3.

Let it swell

Cover the dough with cling film and let it swell for 20 minutes.

Prepare the mold

Grease a loaf pan and line with baking paper.

Pour dough into mold and let rest

Pour the dough into the mold, smooth the surface and let it rest in the mold for 30 minutes.

Optional: Brush and sprinkle

Optional: Brush with oil and sprinkle with seeds.

Bake

Bake at 180 °C for approx. 60-70 minutes until the bread is golden brown and firm.

Let cool

Let the bread cool completely before slicing.
