Description

This chicken broccoli salad with lemon dressing is a light and protein-rich dish, ideal for a quick meal. The salad is prepared in about 25 minutes and is perfect as a main course or appetizer. With fresh broccoli, tender chicken and a tangy lemon dressing, it's a healthy and tasty option. Suitable for a low-carb diet.

Ingredients (10 ingredients)

  • 0.5 piece Onion
  • 1 tbsp Olive oil
  • 250 g Broccoli
  • 2 piece Chicken breast fillet
  • 0.5 bunch Parsley
  • 2 tbsp Lemon juice
  • 2 tbsp Olive oil
  • 1 tsp Mustard
  • to taste Salt
  • to taste Pepper

Preparation (7 steps)

Chop onion

Put 1/2 onion into the mixing bowl and chop for 3 sec./speed 5.

Sauté onion

Add 1 tbsp olive oil to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Chop broccoli

Thermomix® Setting

Put 250 g broccoli in florets into the mixing bowl and chop for 4 sec./speed 4. If necessary, push down with the spatula and repeat.

Fry chicken

Fry 2 chicken breast fillets in a separate pan with some olive oil until cooked through. Then cut into bite-sized pieces.

Prepare dressing

For the dressing, put 2 tbsp lemon juice, 2 tbsp olive oil, 1 tsp mustard, salt and pepper to taste into the mixing bowl and stir for 10 sec./speed 3.

Mix salad

Put the chopped broccoli, the fried chicken pieces and 1/2 bunch of chopped parsley in a bowl. Pour the dressing from the mixing bowl over it and mix everything well.

Serve

Serve the chicken broccoli salad.
