Description

This rice dish with chicken and vegetables is a real all-rounder for everyday life! I like to make it when I need something quick and healthy. The chicken is fried until juicy and harmonises wonderfully with the crunchy broccoli, the fruity tomatoes and the fresh spring onions. The rice is cooked directly in the Thermomix® with the vegetable stock, which makes the dish particularly easy. A dash of fresh lemon juice at the end adds extra freshness. Perfect for a quick lunch or dinner!

Ingredients (9 ingredients)

  • 1 piece Broccoli
  • 200 g Tomatoes
  • 1 bunch Spring onions
  • 300 g Chicken fillet
  • 2 tbsp Rapeseed oil
  • 250 g Rice
  • 1 l Vegetable stock
  • to taste Salt
  • to taste Pepper

Preparation (6 steps)

Prepare vegetables

Clean the broccoli and cut into small florets. Wash the tomatoes, remove the stalk and dice. Clean the spring onions and cut into fine rings. Wash the chicken fillet, pat dry and cut into strips.

Fry chicken

Heat 2 tbsp rapeseed oil in a pan and briefly fry the chicken fillet in it.

Add rice and vegetables

Add fried chicken, broccoli and 250 g rice to the mixing bowl and sauté for 3 min./120°C/speed 1.

Let simmer

15 min/212°F/Speed 1 100

Add 1 l vegetable stock and simmer for 15 min./100°C/speed 1.

Add tomatoes and spring onions

Thermomix® Setting
5 min/212°F/Speed 1 100

Add 200 g tomatoes and 1 bunch of spring onions and simmer for a further 5 min./100°C/speed 1.

Season and serve

Let the rice stand for 2 minutes, season with salt and pepper and serve.
