Description

This hearty chicken dish is packed with Spanish flavors. Chorizo, peppers, and smoked paprika create a rich and savory sauce that perfectly complements the tender chicken thighs. I've been making this recipe for my family for years, and it's always a hit! It's perfect for a cozy weeknight dinner or a casual weekend brunch. The butter beans add a creamy texture, and the olives provide a salty tang. This dish is also great for meal prepping – it tastes even better the next day!

Ingredients (11 ingredients)

  • 2 tbsp extra virgin olive oil
  • 1 piece onion
  • 150 g chorizo
  • 1 piece red pepper
  • 1 piece yellow pepper
  • 1 tsp sweet smoked paprika
  • 4 clove garlic cloves
  • 400 g can chopped tomatoes
  • 150 g pitted green olives
  • 400 g can butter beans
  • 8 piece bone-in, skin-on chicken thighs

Preparation (6 steps)

Prepare the vegetables

Peel and quarter the onion. Place the onion in the mixing bowl and chop for 3 Sec./Stufe 5. Use the spatula to scrape down the sides of the mixing bowl.

Sauté onion and chorizo

Thermomix® Setting

Add 2 tbsp olive oil and 150g chorizo (cut into chunks) to the mixing bowl. Sauté for 5 Min./120°C/Stufe 1.

Add peppers and spices

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 red pepper (cut into chunks), 1 yellow pepper (cut into chunks), 1 tsp sweet smoked paprika, and 4 garlic cloves to the mixing bowl. Cook for 3 Min./120°C/Stufe 1.

Add tomatoes, olives, and beans

Thermomix® Setting
5 min/212°F/Speed 1/Linkslauf 100 Reverse

Add 400g can chopped tomatoes, 150g pitted green olives, and 400g can butter beans to the mixing bowl. Stir to combine using the spatula. Season with salt and pepper to taste. Cook for 5 Min./100°C/Stufe 1/Linkslauf.

Sear the chicken

Preheat oven to 200C/180C fan/gas 6. In a large ovenproof frying pan, sear 8 bone-in, skin-on chicken thighs over medium heat until browned on both sides. Season with salt and pepper.

Combine and bake

Nestle the seared chicken thighs into the sauce in the mixing bowl. Transfer the contents of the mixing bowl to the ovenproof frying pan with the chicken. Bake in the preheated oven for 40 mins until the chicken skin is crisp and the meat is cooked through and tender.
