Description

These ham minced meat rolls are a hearty main course, ideal for festive occasions such as Christmas or New Year's Eve. The seasoned minced meat rolls are wrapped in back bacon and baked with a creamy sauce made from sweet and sour cream, gypsy sauce and chili sauce. The preparation time is approximately 60 minutes.

  • 4 packet Back bacon
  • 1 x sweet Cream
  • 1 x sour Cream
  • 1 ul Bottle of gypsy sauce
  • 1 Fl Chili sauce or Mexico

Season minced meat

Prepare 1 kg of seasoned minced meat.

Wrap minced meat in ham slices

Wrap seasoned minced meat in 4 packets of back bacon and secure with toothpicks.

Prepare casserole dish

Place the minced meat rolls in a casserole dish.

Prepare sauce

These ham minced meat rolls are a classic in our family, which is particularly popular for festive occasions. My grandma has always made them, and I still remember the smell that permeated the whole house when they were simmering in the oven. It is a dish that exudes warmth and cosiness, perfect for cold winter days. The minced meat forms the basis for this hearty dish. I recommend using mixed minced meat, as it remains juicier due to the higher fat content. There are no limits to the imagination when it comes to seasoning. In addition to salt and pepper, I like to use sweet paprika powder, a little garlic powder, a pinch of caraway seeds and a touch of marjoram. These spices give the minced meat a hearty note that harmonises wonderfully with the salty ham. The back bacon, in which the minced meat is wrapped, provides an additional spice and a slightly smoky note. Make sure you use high-quality ham, as this has a significant impact on the taste of the dish. The sauce is the secret to the special taste of these rolls. The combination of sweet and sour cream ensures a creamy consistency and a pleasant acidity, which is perfectly complemented by the gypsy sauce and the chili sauce. The sauce can be prepared quickly and easily in the Thermomix®. Simply put all the ingredients into the mixing bowl and stir briefly until a homogeneous mass is created. Be careful not to mix the sauce for too long, as it may curdle. For a vegetarian version, you can replace the minced meat with a mixture of lentils, rice and vegetables. Instead of ham, you can use aubergine slices or courgette slices. You can experiment with the spices and add curry powder or garam masala, for example. Serve the ham minced meat rolls with potato gratin, spaetzle or a fresh salad. A crispy baguette also goes perfectly with it. The rolls can be prepared well in advance. You can prepare them the day before and store them in the refrigerator. However, the sauce should only be poured over the rolls shortly before baking so that it does not soak in too much. Leftovers can easily be stored in the refrigerator and warmed up the next day. They also taste very good cold.
