Description

These rice burgers with salmon and avocado are a real eye-catcher and taste fantastic! I like to make them for parties or as a special lunch. The sushi rice is perfectly prepared in the Thermomix® and then topped with fresh salmon, creamy avocado and crunchy cucumber. A dab of wasabi mayonnaise provides the necessary spiciness. The preparation is a bit more complex, but it's worth it! The burgers taste particularly delicious when sprinkled with a little black sesame. A great dish for all sushi lovers!

Ingredients (14 ingredients)

  • 330 g Sushi Rice
  • 530 ml Water
  • 60 ml Rice vinegar
  • 1 tsp Salt
  • 2 tsp Sugar
  • 8 tbsp Soy sauce
  • 1 piece Nori leaf
  • 1 tsp Wasabi
  • 4 tbsp Mayonnaise
  • 50 g Smoked salmon
  • 1 piece Avocado
  • 0.25 piece Cucumber
  • 100 g Cream cheese
  • 2 tbsp black Sesame

Prepare rice

Thermomix® Setting
25 min/212°F/Speed 1 100

Place 330 g sushi rice in a sieve and rinse thoroughly under running water until the water is clear. Place the rice in the mixing bowl and add 530 ml water. Insert the simmering basket and cook for 25 min./100°C/speed 1.

Prepare rice vinegar mixture

Mix 60 ml rice vinegar, 1 tsp salt and 2 tsp sugar in a small bowl until the salt and sugar have dissolved.

Season rice

Transfer the cooked rice to a bowl and carefully mix in the rice vinegar mixture. Be careful not to crush the rice.

Shape burger

Shape the seasoned rice into 8 flat "bun halves" with damp hands.

Prepare sauce

Cut 1 nori leaf into 4 equal pieces. Mix 1 tsp wasabi and 4 tbsp mayonnaise in a small bowl.

Prepare topping

Cut 50 g smoked salmon into small pieces. Peel, pit and slice 1 avocado. Cut 0.25 cucumber into slices.

Top burger

Drizzle each rice half with 1 tbsp soy sauce. Spread the bottom halves with cream cheese, then top with salmon, avocado, cucumber and a piece of nori leaf. Drizzle with wasabi mayonnaise and cover with the top rice halves. Finally, sprinkle with 2 tbsp black sesame.
