Description

This Handkäse tartare is a great alternative to the classic Obatzda and brings a breath of fresh air to the table! The sour Handkäse harmonizes wonderfully with the slight spiciness of chili and caraway. The apple wine vinaigrette provides a fruity note and makes the whole thing a real taste experience. Perfect as an appetizer or as a hearty spread on bread. The preparation is very simple and the result is always surprisingly delicious. Be sure to try it!

Ingredients (8 ingredients)

  • 200 g Handkäse
  • 2 piece large Spring onions
  • 2 pinch Caraway
  • 2 pinch Chili
  • to taste Salt
  • to taste Pepper
  • 4 tbsp Cooking oil
  • 6 tbsp Apple wine

Preparation (4 steps)

Prepare Handkäse and spring onion

Cut 200 g Handkäse into approx. 1 cm cubes. Cut 2 large spring onions into fine rings and put both in a bowl.

Prepare vinaigrette

Thermomix® Setting
20 sec/Speed 3

Put 4 tbsp cooking oil, 6 tbsp apple wine, 2 pinches of caraway, 2 pinches of chili, salt and pepper in the mixing bowl and mix for 20 sec./speed 3.

Marinate

Pour the vinaigrette over the Handkäse and spring onions. Mix everything well and marinate covered in the refrigerator for at least 60 minutes.

Arrange

After the marinating time, arrange the Handkäse tartare on plates and serve.

About this recipe

Handkäse, a Hessian classic, has always had a special place in my kitchen. My grandma, herself a true Hessian, often brought it with her, and although I wasn't always thrilled as a child, I've learned to appreciate its unique taste over time. This recipe is a tribute to this tradition, but with a modern twist that takes the Handkäse to a new level. The Handkäse itself is, of course, the star. It brings a sour, slightly pungent note that is created by the ripening. It is important that it is not too young, otherwise it will taste too mild, but also not too old, as it can then be very intense and dry. The spring onions provide a fresh, slightly spicy component and give the whole thing a pleasant texture. They contrast wonderfully with the softness of the cheese. The apple wine vinaigrette is the secret of this recipe. The apple wine, preferably a dry one, gives the Handkäse a fruity acidity that complements it wonderfully. The cooking oil, I prefer a neutral rapeseed oil, serves as a carrier for the aromas and ensures a pleasant consistency. Caraway and chili are the spices that give the dish the necessary spice. The caraway underlines the typical Handkäse taste, while the chili provides a pleasant spiciness. Here you can of course vary, depending on how spicy you like it. The preparation in the Thermomix® is very simple. First prepare the Handkäse and spring onions as described. Then prepare the vinaigrette in the mixing bowl. Make sure that the ingredients are well mixed. The 20 seconds on speed 3 are ideal for obtaining a homogeneous emulsion. Then pour the vinaigrette over the Handkäse and spring onions and mix everything well. Marinating is crucial so that the flavors combine well. Let it steep in the refrigerator for at least an hour, but preferably longer. For a vegetarian version, you can of course not replace the Handkäse, as it is the main ingredient. If you like it vegan, you have to resort to another recipe. With the spices you can experiment to your heart's content. Instead of chili, you can also use paprika powder, or add some garlic. Fresh herbs such as parsley or chives also go perfectly. Serve the Handkäse tartare on fresh farmhouse bread or with jacket potatoes. It is also a great idea as a side dish to a salad. A glass of apple wine is of course a perfect match. The Handkäse tartare keeps well covered in the refrigerator for 2-3 days. It can also be prepared well, as it only tastes better due to the marinating. So you always have a delicious and unusual spread at hand.
