Description

These horse mackerel empanadas are a delicious and easy-to-prepare snack, perfect for an informal meal or as an appetizer at a gathering with friends. The combination of flaked horse mackerel with sautéed onion and parsley creates a tasty and aromatic filling that contrasts wonderfully with the crispy dough. I usually add a chopped boiled egg to give it an extra touch of creaminess and flavor. The preparation is simple and quick, ideal for those days when you don't want to spend a lot of time in the kitchen. Go ahead and try them, you will love them! Ingredients (6 ingredients)

  • 150 gramos horse mackerel
  • 1 piece onion
  • 1 rama parsley
  • 1 piece boiled egg
  • 4 masas for empanadas
  • 400 mililitros oil for frying

Prepare the horse mackerel

Clean the horse mackerel, removing the bones and skin. Flake the fish and reserve.

Chop the onion and parsley

Wash the onion and parsley. Cut the onion into small cubes and the parsley as small as possible. Reserve.

Sauté the onion

Add a drizzle of oil to the Thermomix bowl. Add the chopped onion and sauté 3 Min./120°C/Stufe 1.

Add the parsley and horse mackerel

Thermomix® Setting
2 min/212°F/Linkslauf Speed 1 100 Reverse

Add the chopped parsley and flaked horse mackerel to the Thermomix bowl. Season to taste with salt and pepper. Cook 2 Min./100°C/Linkslauf Stufe 1.

Fill the empanadas

Spread out a dough for empanada and fill with a portion of the horse mackerel sauté. If desired, add chopped boiled egg.

Close the empanadas

Close the edges of the empanada with the help of a fork, making sure they are well sealed.

Fry the empanadas

Heat the oil in a frying pan over medium-high heat for at least 5 minutes. Carefully immerse one of the empanadas in the hot oil and fry for 3-5 minutes on each side, until golden brown.

Serve

Remove the fried empanadas from the oil and place them on absorbent paper to remove excess fat. Serve hot.
