Ingredients (10 ingredients)

  • 275 g fresh puff pastry
  • 100 g Bacon in one piece
  • 200 g Raclette cheese
  • 2 Egg yolk
  • 1 tsp Caraway
  • 190 g Silverskin onions
  • 3 tbsp Sugar
  • 150 ml dry red wine
  • 2 Zweig(e) Thyme
  • Fat for the molds

Preparation (9 steps)

Prepare puff pastry and line molds

Unroll the puff pastry. Grease four tartlet molds (8-10 cm diameter) with fat. Cut out four dough circles that are approx. 2 cm larger than the molds. Line the molds with the dough and prick the dough several times with a fork. No Thermomix setting required.

Prepare bacon

Cut 100 g bacon into small cubes. No Thermomix setting required.

Prepare cheese

Remove the rind from 200 g raclette cheese and cut it so that the bottoms of the molds can be lined with cheese. Distribute ¼ of the bacon cubes on top and cut the remaining cheese and distribute it on the bacon. No Thermomix setting required.

Prepare puff pastry lids

Cut out lids for the molds from the remaining dough. Use a cookie cutter to cut out 4 small stars or fir trees each. No Thermomix setting required.

Complete tartlets

Whisk 2 egg yolks and brush the puff pastry edges with them. Place the lid on top and press firmly on the edges. Prick the dough in a star shape with a fork. Brush with egg yolk and place stars in the middle. Press down lightly and also brush with egg yolk. Sprinkle with 1 teaspoon of caraway. No Thermomix setting required.

Prepare red wine onions

Drain 190 g silverskin onions. No Thermomix setting required.

Caramelize sugar

Thermomix® Setting
5 min/248°F/Speed 1 120

Put 3 tbsp sugar into the mixing bowl and caramelize for 5 min./120°C/speed 1 without the measuring cup. Use a spatula to push the sugar away from the edge if necessary.

Simmer red wine onions

Thermomix® Setting
15 min/212°F/Linkslauf Speed 1 100 Reverse

Pour 150 ml dry red wine into the mixing bowl and bring to the boil for 1 min./100°C/speed 1, dissolving the caramelized sugar in the red wine. Add 190 g silverskin onions and 2 sprigs of thyme and simmer for 15 min./100°C/Reverse speed 1.

Bake

Bake the prepared tartlets in a preheated oven (electric oven: 200 °C/convection oven: 175 °C/gas: see manufacturer) for approx. 15 minutes. No Thermomix setting required.
