Description

These hearty garlic dough pieces are an absolute hit at any party or cozy brunch! I always like to make them because they are so easy to prepare and simply taste delicious. The yeast dough is mixed with garlic, parsley, mozzarella, dried tomatoes and olives and baked in muffin tins. The combination of spicy garlic and Mediterranean flavors makes them simply irresistible. They taste best warm, when the mozzarella is still nicely melted. A great finger food that is guaranteed to please everyone!

Ingredients (7 ingredients)

  • 1 Pck. Fresh yeast dough (Sunday rolls)
  • 5 tbsp Butter, melted
  • 2 Zehe(n) Garlic
  • 3 Stiel/e Parsley, chopped
  • 200 g Mozzarella, grated
  • 25 g Tomato(es), dried, chopped
  • 30 g Olives, chopped

Preparation (7 steps)

Preheat oven

Preheat the oven to 190°C top/bottom heat.

Chop garlic

Thermomix® Setting

Put 2 cloves of garlic into the mixing bowl and chop for 3 sec./speed 7. Push down with the spatula.

Chop parsley

Thermomix® Setting

Put 3-4 sprigs of parsley into the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Prepare dough

Open 1 pack of yeast dough roll and cut the dough pieces into 4 pieces each. Put in a bowl.

Mix ingredients

Put 5 tablespoons of melted butter, the chopped garlic and parsley, 200 g of grated mozzarella, 25 g of chopped dried tomatoes and 30 g of chopped olives in the bowl with the dough pieces and mix well.

Fill and bake muffins

Fill the wells of a muffin tin with about 3 pieces of yeast dough and press them down slightly. Fill the remaining wells in the same way. Bake in the preheated oven for about 15 minutes until golden brown.

Serve

The finished garlic dough pieces are best served warm.

These hearty garlic dough pieces have been a hit at our house since I first tried them a few years ago. I was inspired by a vacation in Italy, where there were delicious, small pastries with olives and herbs on every corner. I wanted to turn these flavors into something simple and quick that you could easily share with friends. And that's how these dough pieces came about. The ingredients play a crucial role. The fresh yeast dough, i.e. the dough for Sunday rolls, forms the basis. It is uncomplicated and ensures a loose, fluffy texture. The melted butter gives the whole thing a nice juiciness and supports the flavors. The garlic is of course the star! It provides the hearty note that makes these dough pieces so special. The parsley brings freshness and a light, grassy note into play. The grated mozzarella melts during baking and provides a creamy, slightly salty component. The dried tomatoes add an intense, slightly sweet spice, while the olives with their salty, slightly bitter taste round off the Mediterranean aroma. When preparing it in the Thermomix®, it is important not to chop the garlic and parsley too finely. There should still be small pieces that you can taste in the dough later. After chopping, be sure to push it down with the spatula so that everything is evenly distributed. When mixing the ingredients with the dough, it is important that everything is well combined, but the dough is not processed too much. Gentle folding is the key here. Make sure that the muffin tins are not too full, as the dough will rise during baking. For a vegetarian option, you can simply make sure that the mozzarella used was produced without animal rennet. A vegan version is a little more complex, as you have to replace the yeast dough and the mozzarella. However, there are now good vegan alternatives on the market. You can vary the spices as you like. Oregano, thyme or rosemary go perfectly with the Mediterranean aromas. If you like it a little spicier, you can add a pinch of chili flakes. The garlic dough pieces taste best warm, straight from the oven. They are a great finger food for parties or a delicious snack in between. They go well with a fresh salad or a dip, such as herb curd or aioli. They are also a great side dish for grilled food. The dough pieces can be prepared well. You can prepare the dough the day before and store it in the refrigerator. Before baking, it should then have some time to rise. Baked dough pieces can be stored in the refrigerator and briefly reheated in the oven or microwave before serving. They may not taste quite as fresh then, but they are still delicious.
