Description

This hearty oven pancake with minced meat, prepared in the Thermomix®, is a hearty main course for the whole family. The main ingredients are ground beef, eggs, flour, milk and tomatoes. Within 40 minutes, a delicious casserole for 4 servings is created. Ideal as an Italian-inspired snack, party food or for a big appetite.

Ingredients (18 ingredients)

  • 4 piece Eggs (size M)
  • 100 g Flour - Type 550 or 405, Spelt flour Type 630
  • 100 ml Milk
  • 50 ml Mineral water - sparkling water with carbon dioxide
  • 1 pinch Salt
  • 1 Msp white or black Pepper
  • 500 g Ground beef
  • 500 g Tomatoes
  • 2 piece Onions
  • 1 clove Garlic
  • 1 tsp sweet paprika powder
  • 1.5 tsp dried Oregano
  • 2 Kugeln Mozzarella
  • 1 tbsp Vegetable oil
  • 1 tbsp Tomato paste
  • Salt
  • Pepper
  • fresh Basil - for garnish

Preparation (10 steps)

Preheat oven

Preheat the oven to 200°C top/bottom heat (convection 180°C) and heat the baking sheet in the oven. This step is done without Thermomix.

Stir flour and milk

Add 100 g flour and 100 ml milk to the mixing bowl and stir for 20 sec/speed 4 until almost no lumps remain.

Complete dough

Thermomix® Setting

Add 4 eggs, 50 ml mineral water, 1 pinch of salt and 1 pinch of pepper and stir in for 15 sec/speed 3. Set the dough aside and let it rest until everything else is prepared.

Chop onions and garlic

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 7

Put 2 peeled onions into the mixing bowl and chop for 3 sec/speed 5. Then add 1 clove of garlic and chop for 3 sec/speed 7. Use the spatula to push everything down from the edge.

Sauté onions and garlic

Thermomix® Setting

Add 1 tbsp vegetable oil to the onions and garlic in the mixing bowl and sauté for 3 min/120°C/speed 1.

Fry minced meat

The minced meat is fried in a separate pan. Add 500 g ground beef to a pan with the sautéed onions and garlic, season directly with 1 tsp salt and fry until crumbly. When the meat starts to brown, add 1 tsp paprika powder and 1 tbsp tomato paste and briefly roast everything together. This step is done without Thermomix.

Pre-bake pancake batter

Take the baking sheet out of the hot oven, place baking paper on it or rub it with vegetable oil and immediately pour the pancake batter onto it. Spread the dough a little with the dough scraper. Slide the pancake sheet into the oven on the middle rack and pre-bake for 5 minutes. This step is done without Thermomix.

Cover

Remove the pancake sheet from the oven, pluck a ball of mozzarella into small pieces and spread on top, cover with 500 g tomato slices and sprinkle with 1.5 tsp oregano. This step is done without Thermomix.

Spread and bake minced meat

Now spread the minced meat on the tomatoes, pluck the second mozzarella ball into small pieces and spread it evenly over it. Put it back in the oven and bake for another 15 minutes until the mozzarella has melted nicely. This step is done without Thermomix.

Garnish

Garnish with fresh basil. This step is done without Thermomix.

I remember how my grandma used to make similar dishes, but without a Thermomix. She called it "Farmer's Pan" and it was always a highlight when she brought it to the table. This recipe is a tribute to those memories, modernized and simplified by the possibilities of the Thermomix®. The ingredients play a crucial role. The ground beef forms the basis for the hearty taste, while the tomatoes add a fruity acidity and juiciness. The onions and garlic provide an aromatic depth, which is further enhanced by the paprika powder and oregano. The mozzarella, used in two portions, provides a creamy base under the tomatoes on the one hand and a golden brown, melted crust on the other. The pancake batter itself, consisting of eggs, flour, milk and mineral water, forms the basis and ensures a loose, but stable structure. The mineral water makes the dough a little fluffier. When preparing it in the Thermomix®, it is important to keep to the order. Chopping onions and garlic is particularly even and quick in the Thermomix®. Sautéing in the mixing bowl saves time and ensures an intense aroma. However, I prefer to fry the minced meat in a separate pan, as it browns better there and develops roasted aromas that do not arise in the Thermomix® in this way. Make sure to preheat the baking sheet really well so that the pancake is nice and crispy from below. For a vegetarian version, the minced meat can be replaced with a plant-based alternative such as soy granules or lentils. A vegan version requires replacing the eggs and milk with plant-based alternatives and the mozzarella with a vegan cheese alternative. There are no limits to your imagination when it comes to spices. A little chili for a spicier note, fresh herbs such as rosemary or thyme for a Mediterranean aroma or a pinch of cumin for an oriental touch - anything is allowed. Serve the oven pancake best straight from the oven, when the mozzarella is still nicely melted. A fresh salad with a light vinegar-oil dressing goes perfectly with it. A dollop of sour cream or herb quark can also round off the dish. Leftovers of the oven pancake can easily be stored in the refrigerator. It can be reheated well the next day, either in the oven or in the microwave. The pancake can also be prepared well in advance. The dough can be prepared the day before and stored in the refrigerator. The minced meat can also be prepared and stored in the refrigerator. This significantly reduces the preparation time on the day of the meal.
