Description

This pork and bean casserole is a hearty and comforting dish, perfect for a chilly evening. I've been making this recipe for years, and it's always a hit with my family. The combination of tender pork, creamy beans, and aromatic herbs creates a truly satisfying meal. It's especially delicious during the autumn and winter months. The long cooking time allows the flavors to meld together beautifully. Serve with crusty bread and some green vegetables for a complete and balanced meal. This casserole is also great for meal prepping!

Ingredients (16 ingredients)

  • 4 tbsp fat
  • 350 g assorted pork
  • 1 piece large onion
  • 10 clove fat garlic cloves
  • 1 piece carrot
  • 1 tsp fennel seeds
  • 2 tbsp red wine vinegar
  • 600 ml stock
  • 1 tbsp tomato purée
  • 2 piece rosemary
  • 1 handful parsley
  • 400 g can haricot or cannellini beans
  • 1 few tbsp fresh or dried breadcrumbs
  • 1 drizzle oil
  • 1 piece crusty bread
  • 1 piece green vegetables

Preparation (10 steps)

Prepare the ingredients

Preheat the oven to 140°C (120°C fan/gas 1). Dice the assorted pork into bite-sized pieces. Slice the onion and carrot. Keep the garlic cloves whole.

Sauté the vegetables

Add the fat to the Thermomix bowl and heat for 3 Min./120°C/Stufe 1.

Sear the pork

Add the diced pork to the Thermomix bowl and cook for 5 Min./120°C/Stufe 1. Stir occasionally with the spatula to ensure even cooking.

Add aromatics and vegetables

Add the sliced onion, whole garlic cloves, carrot, and fennel seeds to the Thermomix bowl. Cook for 5 Min./120°C/Stufe 1 to soften the vegetables.

Deglaze and add liquids

Pour the red wine vinegar into the Thermomix bowl, scraping any meaty bits off the bottom. Add the stock, tomato purée, half of the rosemary, and half of the parsley.

Simmer and transfer to oven

Bring the mixture to a boil in the Thermomix by cooking for 10 Min./100°C/Stufe 1. Season with salt and pepper. Transfer the mixture to a large ovenproof pan with a tight-fitting lid.

Bake in the oven

Cover the pan with the lid and put it into the preheated oven for 2 hours, removing the lid for the final hour of cooking. Stir occasionally and add the haricot or cannellini beans with 30 minutes to go.

Prepare the topping

Remove the pan from the oven and heat the grill. Scatter the top with the remaining herbs and breadcrumbs, and drizzle a little oil over the top.

Grill the topping

Return the pan to the oven under the grill for 5-10 minutes, until the breadcrumbs are golden.

Serve

Serve the pork and bean casserole hot with crusty bread and green vegetables.
