Description

This hearty potato vegetable composition is an absolute highlight for everyone who likes it rustic and aromatic. The combination of potatoes, peppers, mushrooms and zucchini, refined with garlic, herbs and a slight spiciness, makes this dish a true taste experience. I love how the potatoes become nice and crispy in the oven, while the vegetables develop their full flavor. Perfect as a vegetarian main course or as a side dish to grilled food. A touch of freshly grated Parmesan cheese rounds off the dish. The preparation is straightforward and the result is simply delicious!

Ingredients (17 ingredients)

  • 6 piece Potatoes, waxy, medium-sized
  • 1 piece Bell pepper(s), red, approx. 200 g
  • 150 g Mushrooms, brown
  • 300 g Zucchini, small
  • 1 piece Onion(s), red
  • 2 clove Garlic
  • 50 g Tomato paste, triple concentrated
  • 50 ml Water
  • 50 ml Olive oil
  • 1 TL, gehäuft Salt
  • 1 tsp Pepper, white, freshly ground
  • 1 tbsp Thyme, freshly chopped, or dried, then finely crushed
  • 1 tbsp Rosemary, freshly chopped
  • 1 tsp Sugar
  • 1 TL, gestr. Harissa
  • 1 etwas Organic lemon zest, grated
  • 1 n. B. Parmesan

Preparation (4 steps)

Chop onion and garlic

Thermomix® Setting

Cut the red onion into quarters and place in the mixing bowl with the 2 cloves of garlic. Chop for 3 sec./speed 5. Scrape down from the edge with the spatula.

Prepare marinade

Thermomix® Setting
10 sec/Speed 3

Add 50 g tomato paste, 50 ml water, 50 ml olive oil, 1 tsp salt, 1 tsp pepper, 1 tbsp thyme, 1 tbsp rosemary, 1 tsp sugar and 1 tsp harissa and some grated organic lemon zest to the mixing bowl and stir for 10 sec./speed 3.

Marinate potatoes

Place the 6 washed and quartered potatoes in a bowl and add half of the marinade from the mixing bowl. Mix well so that all the potatoes are covered.

Marinate vegetables

Mix the remaining marinade in the mixing bowl with the 1 red bell pepper (in strips), the 150 g brown mushrooms (quartered or sixth) and the 1 small zucchini (in pieces).
