Description

This white chocolate and hazelnut ice cream is a real treat! I often prepare it for birthdays or summer meals. The sweetness of white chocolate goes perfectly with the crunchiness of hazelnuts. This is a recipe that I adapted for the Thermomix®, which makes it even easier to make. The texture is incredibly smooth and the taste is simply irresistible. A perfect dessert for white chocolate and hazelnut lovers! Feel free to vary the pleasures by adding other dried fruits or chocolate chips.

Ingredients (6 ingredients)

  • 180 g White chocolate
  • 50 g Crushed hazelnut(s)
  • 50 cl Whole milk
  • 130 g Sugar
  • 5 piece Egg(s) yolk(s)
  • 200 g Fresh cream (thick)

Preparation of the ice cream base

Thermomix® Setting
8 min/194°F/Speed 2 90

Pour 50 cl of whole milk into the Thermomix® bowl. Heat for 8 Min./90°C/Stufe 2 without the measuring cup.

Mixing the egg yolks and sugar

In a bowl, mix 5 egg yolks and 130 g of sugar until a pale and frothy mixture is obtained.

Cooking the custard

Thermomix® Setting
7 min/176°F/Speed 3 80

Gently pour the hot milk over the egg yolks and sugar mixture, stirring constantly. Transfer the mixture to the Thermomix® bowl. Cook for 7 Min./80°C/Stufe 3 without the measuring cup. The cream should coat the spoon.

Incorporating the white chocolate

Thermomix® Setting
2 min/122°F/Speed 2 50 Reverse

Add 180 g of white chocolate cut into pieces in the Thermomix® bowl. Mix for 2 Min./50°C/Stufe 2, Linkslauf, until the chocolate is completely melted.

Cooling the mixture

Transfer the mixture to a container and let it cool completely at room temperature, then place in the refrigerator for at least 2 hours.

Incorporating the fresh cream and hazelnuts

Add 200 g of thick fresh cream and 50 g of crushed hazelnuts to the cooled mixture. Mix gently.

Churning the ice cream

Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.

Final freezing

Put the ice cream in the freezer for at least 4 hours before serving.
