Description

These savory potato cheddar nests are a real eye-catcher at any brunch buffet! The combination of crispy potatoes, spicy bacon and creamy cheddar is simply irresistible. And the best part: With the Thermomix® they are prepared in no time at all. I especially like to make them when I have guests, because they are super easy to prepare and are always a highlight. If you like it vegetarian, you can simply leave out the bacon. An absolute must for all potato and cheese fans!

Ingredients (7 ingredients)

  • 250 g floury potatoes
  • 1 piece Onion
  • 50 g Bacon
  • 70 g Cheddar grated
  • 2 tbsp Olive oil
  • to taste Salt
  • to taste Pepper

Preparation (7 steps)

Prepare potatoes

Thermomix® Setting
5 sec/Speed 5

Peel 250 g floury potatoes, cut into coarse pieces and put into the mixing bowl. Chop for 5 sec./level 5. Cover with water and let soak for 5 minutes. Then pour through a sieve and squeeze well in a kitchen towel.

Chop onion and bacon

3 sec/Speed 5

Peel 1 onion, quarter and put into the mixing bowl. Chop for 3 sec./level 5. Cut 50 g bacon into strips and add to the onions in the mixing bowl.

Mix potato mixture

Thermomix® Setting
20 sec/Speed 3/Linkslauf Reverse

Put the squeezed potatoes, the onion-bacon mixture, 70 g grated cheddar, 2 tbsp olive oil, salt and pepper to taste into the mixing bowl. Mix for 20 sec./level 3/reverse.

Prepare muffin tin and form potato nests

Grease eight wells of a muffin tin and spread the potato mixture evenly over them. Form the potato mixture into a nest in the wells so that the bottom and walls are covered and a hollow is created in the middle.

Pre-bake potato nests

Bake the potato nests in a preheated oven at 200 °C top/bottom heat for 20 minutes.

Add eggs and bake until done

Reduce the temperature to 180 °C and add a beaten egg to each well. Bake for another 12 minutes.

Serve

Remove the muffin tin from the oven and carefully loosen the nests from the mold with a knife. Garnish with fresh cress and serve immediately.
