Description

Hearty cheese spätzle with fried onions are a hearty main course from the Thermomix® with flour, eggs and spicy mountain cheese. The vegetarian dish is ideal for student kitchens and lovers of home-style cooking. In 75 minutes, a filling meal for 4 servings is created. Preparation requires about 45 minutes of active work.

Ingredients (13 ingredients)

  • 400 g Flour
  • 1 tsp Salt
  • 250 ml Water
  • 4 piece Eggs
  • 100 g Emmentaler
  • 100 g medium-aged mountain cheese
  • 100 g aged mountain cheese
  • 3 piece Onions
  • 2 tbsp Flour
  • Clarified butter
  • Pepper
  • Nutmeg
  • Parsley

Preparation (9 steps)

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Add 400 g flour, 1 tsp salt, 250 ml water and 4 eggs to the mixing bowl. Process for 2 min./kneading setting to a smooth dough. If necessary, add a little more water until the dough drips thickly from the spatula.

Let the dough rest

Remove the dough from the mixing bowl, place in a bowl, cover and let rest for 30 minutes.

Grate cheese

Thermomix® Setting
10 sec/Speed 5

Place 100 g Emmentaler, 100 g medium-aged mountain cheese and 100 g aged mountain cheese in coarse pieces in the mixing bowl and chop for 10 sec./speed 5. Transfer and set aside.

Prepare fried onions

Peel 3 onions, halve and cut into thin slices. Mix the onion slices with 2 tbsp flour.

Prepare fried onions

Heat plenty of clarified butter in a pan and fry the onions in it until golden brown and crispy. Drain the fried onions on a kitchen towel and let cool.

Prepare Spätzle

Bring water to a boil in a large saucepan and salt generously. Press the spätzle dough in portions into the boiling water with a spätzle press or spätzle slicer. When the spätzle rise to the surface, remove with a slotted spoon and place in a baking dish.

Layer cheese spätzle

Sprinkle the spätzle in the baking dish with grated cheese. Repeat the process until the dough is used up. Season with pepper and nutmeg.

Melt cheese

Place the cheese spätzle in the oven preheated to 90°C and bake until the cheese has melted. This takes about 10-15 minutes.

Serve

Serve the cheese spätzle with fried onions and fresh parsley.
