Description

This hearty pasta roll is a real eye-catcher on any table! I especially like to make it in the summer when the tomatoes are nice and juicy and aromatic. The lamb's lettuce pesto gives the roll a fresh, slightly nutty note that harmonizes perfectly with the creamy buffalo mozzarella and the dried tomatoes. The preparation is a bit more complex, but the result is worth it. The pasta roll is ideal as a main course for a festive meal or as a delicious side dish for grilling. Vegetarians will love this dish!

Ingredients (12 ingredients)

  • 1 piece Pasta dough
  • 60 g Pine nuts
  • 125 g Lamb's lettuce
  • 80 g Parmesan or vegetarian hard cheese (piece)
  • 3 clove Garlic
  • 150 ml Olive oil
  • 200 g Whipping cream
  • to taste Salt
  • to taste Pepper
  • 500 g Tomatoes
  • 250 g Buffalo mozzarella
  • 150 g dried Tomatoes

Preparation (12 steps)

Roast pine nuts

Roast the 60 g pine nuts in a pan without fat until golden brown. Then remove and let cool.

Grate Parmesan

Put 80 g of Parmesan or vegetarian hard cheese in pieces into the mixing bowl and chop for 10 sec./level 8.

Chop garlic

Thermomix® Setting
3 sec/Speed 7

Peel 3 cloves of garlic, put them in the mixing bowl and chop for 3 sec./level 7.

Prepare lamb's lettuce pesto

Thermomix® Setting
20 sec/Speed 10

Put 125 g lamb's lettuce, roasted pine nuts, chopped garlic, 50 g grated Parmesan and approx. 100 ml olive oil in the mixing bowl and puree for 20 sec./level 10. Scrape from the edge with the spatula and puree again for 10 sec./level 10 if necessary.

Refine pesto

Thermomix® Setting
10 sec/Speed 3

Add 125 g whipping cream to the pesto in the mixing bowl and stir in for 10 sec./level 3. Season with salt and pepper.

Prepare tomatoes

Wash and dice 500 g tomatoes. Also dice 250 g buffalo mozzarella and 150 g dried tomatoes.

Mix tomato filling

Mix diced tomatoes, buffalo mozzarella and dried tomatoes in a bowl and season with a little salt and pepper.

Fill and shape pasta roll

Halve the pasta dough and roll out into a thin rectangle (approx. 35 x 50 cm). Spread 1/3 of the lamb's lettuce pesto on the dough. Spread half of the tomato filling on top and roll up.

Place pasta roll in dish

Place the filled and rolled dough roll in one half of a greased ovenproof dish.

Prepare second roll

Process the second half of the dough in the same way and also place it in the dish.

Prepare sauce

Thermomix® Setting
5 sec/Speed 3

Put the remaining pesto and the remaining 75 g whipping cream in the mixing bowl and mix for 5 sec./level 3.

Bake pasta roll

Pour the pesto-cream sauce over the rolls and sprinkle with the remaining grated Parmesan. Bake in a preheated oven at 200°C (top/bottom heat) for approx. 30 minutes.
