Description

This potato salad is a real classic, which gets a special touch from the creamed horseradish. I like to make it for parties or as a side dish for barbecues. The preparation is super easy and quick. The potatoes are cooked in the Thermomix® and then refined with a spicy broth, onions and capers. A dash of red wine vinegar and olive oil ensure the perfect balance. If you like, you can also serve a few Vienna sausages with it. Tastes simply delicious!

Ingredients (12 ingredients)

  • 1 kg Potatoes, waxy
  • 200 g Salt
  • 2 piece red Onions
  • 1 tbsp Mustard
  • 2 tsp Creamed horseradish
  • 2 tsp Capers
  • to taste Pepper
  • to taste Nutmeg
  • 4 Zweig Parsley
  • 50 ml Red wine vinegar
  • 2 tbsp Olive oil
  • 8 piece Vienna sausages

Preparation (5 steps)

Cook potatoes

Thermomix® Setting
25 min/Varoma/Speed 1 Varoma

Put 1 kg of potatoes, waxy, into the simmering basket. Add 200 g salt and 1 liter of water to the mixing bowl, insert the simmering basket and cook for 25 min./Varoma/speed 1. Then let the potatoes cool, peel and cut into slices.

Chop and sauté onions

Thermomix® Setting
3 sec/Speed 5, 3 min/248°F/Speed 1 120

Peel, quarter and place 2 red onions in the mixing bowl. Chop for 3 sec./speed 5. Push down with the spatula. Add 2 tbsp olive oil and sauté for 3 min./120°C/speed 1.

Prepare broth

Thermomix® Setting
5 min/212°F/Speed 1 100

Add 50 ml red wine vinegar, 1 tbsp mustard, 2 tsp creamed horseradish, 2 tsp capers, salt, pepper and nutmeg to the onions in the mixing bowl and simmer for 5 min./100°C/speed 1.

Mix salad

Place the potato slices in a bowl. Pour the hot stock from the mixing bowl over the potatoes and let it steep for 30 minutes. In the meantime, wash, shake dry and finely chop 4 sprigs of parsley.

Finalize and Serve

Add the chopped parsley to the salad and mix well. Heat 8 Vienna sausages in a separate pot with hot water. Serve the potato salad with the Vienna sausages.
