Description

This sliced calf's liver with apple spring onion ragout is a hearty and fruity dish that is especially good in the autumn season. The combination of tender calf's liver, crisp apple slices and aromatic spring onions makes this dish a special taste experience. I like to make it when I need to be quick, but still want something special on the table. Preparation in the Thermomix® is super easy and guaranteed to succeed. A dash of cider rounds off the dish perfectly. Serve with rice or mashed potatoes.

Ingredients (12 ingredients)

  • 0.5 bunch Spring onions
  • 2 piece Apples
  • Lemon juice
  • 150 g Calf's liver
  • Flour
  • 1 tbsp Oil
  • Salt
  • Mixed peppercorns
  • 2 tbsp Cider (dry)
  • 100 g Whipping cream
  • 0.1 l Clear broth (instant)
  • 2 tbsp Light gravy thickener

Preparation (10 steps)

Prepare spring onions

Clean and wash the spring onions. Cut the light stem into approx. 5 cm long pieces, the green of the spring onion into rings. Set aside.

Prepare apples

Wash the apples. Cut a slice with the stem and core from the middle of each apple. Drizzle with lemon juice. Quarter the remaining apples, remove the core and cut into wedges. Set aside.

Prepare calf's liver

Wash the calf's liver, pat dry, cut into strips and toss in flour. Set aside.

Fry apple slices

Heat oil in a pan. Fry the apple slices in it, remove and set aside.

Fry liver

Fry the liver in the frying fat for 5 minutes. Season with salt and pepper and remove.

Sauté spring onions and apple wedges

Add spring onions and apple wedges to the pan and sauté for approx. 5 minutes.

Prepare sauce

Add cider, cream and broth to the mixing bowl, season with salt and pepper and bring to the boil for 5 mins/100°C/speed 1.

Thermomix® Setting
1 min/212°F/Speed 2 100

Add light gravy thickener and stir in for 1 min/100°C/speed 2.

Thermomix® Setting
2 min/194°F/Linkslauf Speed 1 90 Reverse

Add the fried liver to the sauce and heat for 2 mins/90°C/reverse rotation speed 1.

Serve the sliced dish garnished with the fried apple slices.
