Description

Heavenly cinnamon stars are a festive Thermomix® recipe for approx. 90 delicious cookies. The main ingredients are almonds, sugar, cinnamon and egg whites. The preparation including baking time is about 180 minutes, the active working time is 60 minutes. This recipe is ideal as a Christmas finger food or dessert. Perfect for the festive coffee table or as a gift.

  • 3 Stück Egg white
  • 100 g Sugar
  • 150 g Icing sugar
  • 2 EL Lemon juice
  • 100 g Apricot jam
  • 600 g Almonds
  • 25 g Cinnamon
  • 1 Stück Egg white
  • 80 g Icing sugar
  • 1 EL Lemon juice

Preparation (12 steps)

Whisk egg whites until stiff

Put 3 egg whites into the mixing bowl and whisk until stiff using the butterfly whisk. Insert butterfly whisk. 3 min./speed 3.5.

Sprinkle in sugar and icing sugar

Gradually sprinkle in 100 g sugar and 150 g icing sugar. Butterfly whisk remains inserted. 1 min./speed 3.

Stir in lemon juice and jam

Thermomix® Setting

Add 2 tbsp lemon juice and 100 g apricot jam and stir into the egg white mixture. Remove butterfly whisk. 20 sec./speed 2.

Mix almonds and cinnamon

Mix 600 g almonds (not ground too finely) and 25 g cinnamon in a separate bowl.

Fold in almonds and cinnamon

Fold the almond-cinnamon mixture into the egg white mixture with a spatula.

Let the dough rest

Let the almond mixture rest covered in the refrigerator for 1 to 2 days.

Preheat oven

Preheat oven to 150°C.

Roll out dough and cut out stars

Roll out portions of the almond mixture between cling film to a thickness of about 1 cm and cut out stars. Insert Patix dough cutter.

Prepare glaze

For the glaze, put 1 egg white into the mixing bowl and whisk until frothy using the butterfly whisk. Insert butterfly whisk. 1 min./speed 3.

Work in icing sugar and lemon juice

Add 80 g icing sugar and 1 tbsp lemon juice and work in. Butterfly whisk remains inserted. 15 sec./speed 2.

Apply glaze

Apply the glaze to the stars with a teaspoon.

Bake

Bake on a baking sheet lined with baking paper for 20 to 25 minutes on the lowest rack.
