Description

The sauce should be served immediately and not kept warm for long, as it may curdle otherwise.

Ingredients (9 ingredients)

  • 20 g Cornstarch or Flour
  • 0.25 l Broth (Meat broth, vegetable or fish stock)
  • 2 piece Egg yolk
  • 50 g Fresh, cold Butter (in flakes), Salt
  • 1 pinch White Pepper
  • Lemon juice
  • 1 pinch Sugar
  • White wine
  • 2 tbsp Sweet cream (possibly as whipped cream)

Preparation (4 steps)

Stir cornstarch and broth

Add cornstarch or flour and cold broth to the mixing bowl and stir for 10 sec./speed 3.

Thicken sauce
