Description

These cassava cookies are a gluten-free delight, perfect to accompany afternoon coffee or for a different breakfast. The cassava flour gives them a slightly crunchy texture on the outside and soft on the inside. The recipe is very simple and quick to prepare, ideal for those looking for gluten-free and yeast-free options. The shredded coconut gives it an exotic touch and the instant coffee (optional) enhances the flavor. Go ahead and try them! They are perfect to share with friends and family, especially if they have dietary restrictions. Also, they keep well for several days in an airtight container. I make them often and they are always a success.

Ingredients (7 ingredients)

  • 170 gramos fine cassava flour
  • 100 gramos sugar
  • 4 cucharadas soperas shredded coconut
  • 1 cucharada sopera soft butter
  • 2 piece egg
  • 1 cucharadita instant coffee
  • 1 pinch salt

Preparation (6 steps)

Beat eggs and sugar

Place the eggs and sugar in the Thermomix bowl. Beat for 3 Min./Stufe 4 until you obtain a frothy mixture.

Add butter

Thermomix® Setting
20 sec/Speed 3

Add the soft butter to the bowl and mix for 20 Sek./Stufe 3 until well incorporated.

Incorporate dry ingredients

30 sec/Speed 4

Add the cassava flour, shredded coconut, salt and instant coffee or cinnamon (if using) to the bowl. Mix for 30 Sek./Stufe 4 until you obtain a homogeneous dough. Use the spatula to lower the ingredients from the walls of the bowl if necessary.

Refrigerate the dough

Remove the dough from the bowl, wrap it in plastic wrap and refrigerate for 10 minutes.

Form and bake the cookies

Preheat the oven to 180°C. Form small balls with the dough and place them on a baking sheet covered with baking paper or a silicone mat. Flatten them slightly. Bake for 20 minutes or until golden brown.

Cool and serve

Let the cookies cool completely on a wire rack before serving.
