Description

This chicken consommé is a real panacea, perfect for warming up winter evenings or as a base for other preparations. The recipe is simple and requires only fresh, quality ingredients. I often prepare it when I need a comforting and nutritious dish. The secret lies in the long cooking over low heat, which allows you to extract all the flavor from the chicken and vegetables. The result is a rich, flavorful and light broth, also ideal for those following a diet. Try it, you won't regret it! You can also freeze it in portions to always have it available.

Ingredients (10 ingredients)

  • Chicken
  • Leeks
  • Onions
  • Carrots
  • Celery
  • Garlic
  • Bay leaf
  • Thyme
  • 4 l Water
  • Salt

Preparation (5 steps)

Preparation of the vegetables

Trim the leek eliminating the green part and cut it into 3 pieces. Cut the celery stalks into 3 pieces, peel the carrots and cut them in half. Also peel the onion, remove the ends and cut it in half.

Initial cooking in the Thermomix

Insert the leek, celery, carrots, onion, garlic, bay leaf and sprigs of thyme into the Thermomix bowl. Add the chicken and cover with 4 liters of cold water. Season with salt.

Cooking the broth

90 min/212°F/Speed 1 100

Set the Thermomix to 90 Min./100°C/Stufe 1. During cooking, remove any impurities that form on the surface with a skimmer.

Cooling and filtering

Always with the help of the skimmer transfer the chicken and vegetables to a container. Filter the broth into a bowl and cover with film. Let it cool to room temperature, then refrigerate for 8-9 hours.

Fat removal and heating

Thermomix® Setting
5 min/176°F/Speed 1 80

The next day, remove the bowl from the refrigerator and remove the fat that has formed on the surface. It will be hardened and it will be very simple to remove it with the skimmer. Heat the broth in the Thermomix setting 5 Min./80°C/Stufe 1 and use as desired.
