Description

I love preparing fresh pasta at home, and these pansoti with walnut sauce are a real comfort food! The handmade pasta has a unique texture, and the filling of herbs and ricotta is delicate and flavorful. The walnut sauce, creamy and rich, completes the dish to perfection. Perfect for a Sunday family lunch or a special dinner with friends. The preparation takes a little time, but the result is priceless. A vegetarian dish that will conquer everyone, even the most skeptical! They can be prepared in advance and cooked at the moment.

Ingredients (18 ingredients)

  • 500 g 00 flour
  • 150 ml water at room temperature
  • 30 ml white wine
  • 2 piece medium eggs
  • fine salt
  • 250 g boiled field herbs
  • 100 g ricotta
  • 1 piece eggs
  • 40 g grated cheese
  • nutmeg
  • fine salt
  • 150 g walnuts
  • 120 g stale bread crumbs
  • 120 ml milk
  • 40 g grated cheese
  • marjoram
  • extra virgin olive oil
  • fine salt

Preparation of fresh pasta

Pour 500 g of 00 flour into the bowl. Add 150 ml of water at room temperature, 30 ml of white wine, 2 medium eggs and fine salt to taste.

Hand kneading (if necessary)

If the dough is too dry, add a little water. If it is too sticky, add a little flour. Form a compact, smooth and homogeneous dough. Wrap in transparent film and let it rest for at least 30 minutes at room temperature.

Preparation of the filling

Put in the bowl 250 g of boiled and well-squeezed field herbs, 100 g of ricotta, 1 egg, 40 g of grated cheese, nutmeg to taste and fine salt to taste.

Rolling out the pasta and preparing the pansoti

Divide the dough into two parts. Roll out each part with a pasta machine, obtaining thin sheets. Cut the sheets into squares of 8-10 cm per side. Put a teaspoon of filling in the center of each square. Brush the edges with a little water. Close the squares into a triangle, sealing the edges well. Arrange the pansoti on a floured tray.

Preparation of the walnut sauce

Put in the bowl 120 g of stale bread crumbs soaked in milk (120 ml), 150 g of walnuts, 40 g of grated cheese, fine salt to taste and extra virgin olive oil to taste.

Cooking the pansoti

Bring a pot of salted water to a boil. Cook the pansoti for about 1 minute, until they float to the surface.

Seasoning and serving

Drain the pansoti and pour them into a pan with the walnut sauce, adding a little cooking water from the pasta to soften the sauce. Sauté the pansoti for a few seconds to flavor them. Serve the pansoti with a few fresh marjoram leaves.
