Oats provide fiber and energy, while Greek yogurt adds creaminess and extra protein. They are very easy to prepare and can be customized with your favorite ingredients, such as ham and cheese, vegetables, or even avocado. Go ahead and try them, you will love them! They are also an excellent alternative for those looking for gluten-free options, as long as they use certified gluten-free oats. Perfect for a healthy and delicious lifestyle.

Ingredients (5 ingredients)

  • 4 piece egg whites
  • 40 gramos oat flour or ground oats
  • 2 tbsp Greek yogurt
  • 1 piece egg
  • 1 pinch salt

Beat the eggs

Place the egg whites, whole egg and a pinch of salt in the Thermomix bowl. Beat the mixture for 15 seconds at speed 4.

Cook the pancakes

Heat a non-stick frying pan over medium heat. Add a few drops of oil and spread them with a brush to cover the entire surface. Pour a portion of the mixture into the hot pan and cook until the edges are done.

Flip over and finish cooking

Flip the pancake and cook until golden brown on both sides. Repeat the process with the rest of the dough, adding a little oil to the pan between each pancake.

One day, looking for alternatives to the typical sandwich or scrambled eggs, it occurred to me to try making pancakes with oats. The original idea was to make them sweet, but in the end I opted for a savory version and I loved the result. The key to these pancakes is the combination of ingredients. Egg whites provide protein and lightness, while the whole egg gives it a touch of flavor and helps the pancake become more consistent. Oat flour, or ground oats, is the base of the recipe. It provides fiber, slow-absorbing carbohydrates and a slightly sweet flavor that contrasts very well with the salty touch. Greek yogurt, for its part, adds creaminess and extra protein, as well as an acidic point that balances the whole. Salt, of course, is essential to enhance all the flavors. The preparation with the Thermomix® is very simple. The first thing is to beat the eggs with the salt. It is important that they are well integrated so that the pancake is fluffy. Then, add the oats and yogurt and mix everything until you get a homogeneous dough. If you want a finer texture, you can beat the dough for a few more seconds at a higher speed.
