Description

Honey cake cream recipe.

Ingredients (10 ingredients)

  • 1.3 l Milk
  • 2 Stück Egg yolk
  • 5 EL Sugar
  • 1 g Vanillin
  • 7 EL Cornstarch
  • 200 g Butter
  • 200 g Sweetened condensed milk (Sguschtchonka)
  • 2 EL Honey
  • 1 TL Baking soda
  • 500 g Flour

Preparation (14 steps)

Mix eggs and sugar

Add 2 eggs and 5 tablespoons of sugar to the mixing bowl and mix for 20 seconds/speed 4.

Add butter, honey and baking soda

Add 200 g butter, 2 tablespoons of honey and 1 teaspoon of baking soda to the mixture in the mixing bowl and mix for 10 seconds/speed 3.

Heat mixture

Heat the mixture in the mixing bowl for 8 min./70°C/speed 2, stirring with the spatula along the bottom of the mixing bowl until the sugar is completely dissolved.

Let the mixture cool

Pour the mixture from the mixing bowl into a bowl and let cool for 5 minutes.

Add flour and knead dough

Add 500 g flour to the cooled mixture in the bowl and knead with your hands to form a dough.

Roll out dough and bake

Divide the dough into 6 parts, roll out thinly and bake in a preheated oven at 200 °C for approx. 3–4 minutes until golden brown. Let the honey bases cool down.

Mix egg yolks and sugar

Add 2 egg yolks and 5 tablespoons of sugar to the mixing bowl and mix for 20 seconds/speed 3.

Add cornstarch

Add 7 tablespoons of cornstarch and mix for 10 seconds/speed 3.

Pour in milk and heat

Add 1300 ml milk to the mixing bowl and heat for 15 min./90°C/speed 2, stirring constantly until the cream thickens.

Let cream cool

Cover the cream with cling film (directly on the surface so that no skin forms) and let it cool.

Whisk butter

Add 200 g of soft butter to the mixing bowl and whisk with the butterfly for 5 min./speed 3.

Stir in pudding mixture and condensed milk

Thermomix® Setting
30 sec/Speed 3

Gradually add 1 tablespoon of the cooled pudding mixture and 200 g of sweetened condensed milk (Sguschtchonka) to the whipped butter in the mixing bowl and mix for 30 seconds/speed 3 until the cream is ready.

Layer cake

Layer the cake (base, cream, base...).

Chill

Place the cake in the refrigerator for at least 5 hours, but preferably overnight, so that it is well soaked.
