Description

The cottage cheese roll with pesto is a high-protein and vegetarian finger food that can be prepared quickly in the Thermomix®. The main ingredients are cottage cheese, eggs, pesto, arugula and cherry tomatoes. The preparation time is 45 minutes, including 15 minutes of active work, and yields one serving. This gluten-free dish is ideal for light cuisine or as a healthy main course with few ingredients.

Ingredients (9 ingredients)

  • 200 g Cottage cheese
  • 2 Stück Eggs (size M)
  • 1 TL Oregano
  • 4 EL green Pesto
  • 10 g Arugula
  • 100 g Cherry tomatoes
  • 50 g Mini mozzarella balls
  • Salt
  • Pepper

Preparation (3 steps)

Prepare cottage cheese mixture

Put 200g cottage cheese, 2 eggs (size M), salt, pepper and 1 tsp oregano into the mixing bowl and purée for 30 sec/speed 8.

Bake cottage cheese mixture

Spread the cottage cheese mixture on a baking sheet lined with baking paper and bake in a preheated oven at 200°C top/bottom heat for 25-30 minutes. Then let it cool down a little and carefully remove it from the baking sheet.

Fill wrap

Spread the cottage cheese wrap with 4 tbsp green pesto and top with 10g arugula, 100g cherry tomatoes and 50g mini mozzarella balls. Fold and serve.
