Description

This stewed chicken with okra is a rich and flavorful dish, perfect for autumn evenings. The recipe, of peasant origin, enhances the flavor of the chicken thanks to the spiciness of the chilli and the acidity of the lemon. The okra, with its particular consistency, goes perfectly with the tender meat. I often prepare it when I have guests for dinner, because it is easy to make and always makes a great impression. Serve it with polenta for a complete and comforting meal!

Ingredients (9 ingredients)

  • 3 kg chicken thighs and drumsticks
  • 6 clove chopped garlic
  • salt
  • 'pimenta malagueta' (pepper)
  • 0.5 tazze hot water
  • 600 g 'quiabo' (okra)
  • 2 piece large chopped onions
  • 3 tbsp lemon juice
  • vinegar

Preparation (6 steps)

Chicken marinade

Place the chicken pieces in a large bowl. Add 6 cloves of chopped garlic, salt and 'pimenta malagueta' (pepper) to taste. Mix well to make sure the chicken is well seasoned. Leave to marinate for at least 2 hours in the refrigerator.

Browning the chicken

In a large pan, heat a drizzle of oil over high heat. Add the marinated chicken pieces and brown on all sides until golden. Remove the chicken from the pan and set aside.

Preparation of the sauté

Put 2 large chopped onions in the Thermomix bowl and chop for 3 Sec./Stufe 5. Add a drizzle of oil and cook for 3 Min./120°C/Stufe 1.

Cooking the okra

Thermomix® Setting
10 min/212°F/Speed 1/Linkslauf 100 Reverse

Add 600 g of 'quiabo' (okra) cut into rounds in the bowl. Add 3 tablespoons of lemon juice or vinegar. Cook for 10 Min./100°C/Stufe 1/Linkslauf, stirring gently with the spatula.

15 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the browned chicken in the bowl with the okra. Add ½ cup of hot water. Cook for 15 Min./100°C/Stufe 1/Linkslauf. Check the flavor and add salt if necessary.

Adding the marinade liquid (optional)

Thermomix® Setting
5 min/212°F/Speed 1/Linkslauf 100 Reverse

If you want a more intense flavor, add the chicken marinade liquid to the bowl and cook for another 5 Min./100°C/Stufe 1/Linkslauf.
