Description

These lemon chicken meatballs are true comfort food! Ground chicken meat goes perfectly with creamy ricotta and the scent of lemon. I often prepare them for a quick lunch or an informal dinner with friends. They are very easy to make and everyone always likes them. The final touch of fresh parsley makes them even tastier. Try them, I'm sure you'll love them! Perfect accompanied by a side of fresh vegetables or mashed potatoes.

Ingredients (12 ingredients)

  • 400 g ground chicken
  • 1 piece eggs
  • 250 g ricotta
  • 70 g breadcrumbs
  • 1 piece lemons
  • 0.5 bicchiere white wine
  • 0.5 bicchiere water
  • flour
  • chopped parsley
  • olive oil
  • pepper
  • fine salt

Preparation of the ingredients

Put the parsley in the bowl and chop for 3 Sec./Speed 8. Transfer to a bowl and set aside. Grate the zest of one lemon and squeeze the juice. Keep aside.

Combine the ingredients

In a large bowl, combine the ground chicken, egg, ricotta, chopped parsley, grated lemon zest, salt and pepper. Mix well with a fork to combine the ingredients.

Adding the breadcrumbs

Add the breadcrumbs to the mixture and mix well until a smooth, workable dough is obtained.

Form the meatballs

Take a little of the mixture between your hands and form balls of the desired size, then flatten them slightly. Arrange the meatballs on a tray.

Flour the meatballs

Prepare a plate with the flour and flour each meatball well on all sides.

Brown the meatballs

In a pan, heat a drizzle of olive oil. Add the meatballs and brown them well on all sides.

Deglaze with wine

Deglaze the meatballs with the white wine and let the alcohol evaporate.

Final cooking

Pour the lemon juice and water into the pan. Cook for 5-6 minutes, until a creamy sauce has formed.

Serve

Once cooked, finish with a little fresh chopped parsley and serve the hot lemon chicken meatballs.
