Description

This baked Iberian secreto with tomato and provolone is a delicious main course that is easy to prepare with the Thermomix®. The meat is juicy and flavorful, while the provolone cheese melts creating a creamy and appetizing layer. Ideal for a family meal or a special dinner, this dish is an explosion of Mediterranean flavors. I often prepare it in autumn, when the tomatoes are at their best. It is a guaranteed success! In addition, it is rich in protein and perfect for a balanced diet. You can accompany it with a fresh salad and a good red wine.

Ingredients (8 ingredients)

  • 300 gramos Pork secreto
  • 3 unidades Tomato
  • 0.5 piece Onion
  • 1 piece Provolone cheese
  • 1 chorro Oil
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 1 pinch Oregano

Preparation (7 steps)

Prepare the onion

Thermomix® Setting

Peel and cut the onion in half. Place the onion in the Thermomix® bowl and chop for 3 seconds at speed 5.

Sauté the onion

Thermomix® Setting

Add the oil to the Thermomix® bowl along with the chopped onion. Sauté for 3 minutes at 120°C at speed 1.

Prepare the meat and tomatoes

While the onion is sautéing, cut the pork secreto into medium pieces with scissors. Wash and slice the tomatoes.

Assemble the dish

In an oven-safe dish, place the sautéed onion as a base. Distribute the pieces of pork secreto over the onion. Cover with the tomato slices. Season with salt and pepper and sprinkle with oregano.

Bake the meat with tomato

Preheat the oven to 190°C. Place the dish in the oven and bake for 20 minutes.

Add the cheese

After 10 minutes of cooking, remove the dish from the oven and place the provolone cheese cut into pieces over the meat and tomato. Return the dish to the oven and bake for 10 more minutes, or until the cheese is melted and golden brown.

Serve

Serve the baked Iberian secreto with tomato and provolone hot. Accompany with bread and a salad.
