This chocolate brownie surprise cake is a real eye-catcher on any Easter table! Juicy chocolate brownies are hidden inside a loose, light dough. I make this cake every year for Easter and it's always a hit. The combination of the intense chocolate flavor of the brownies and the vanilla aroma of the light dough is simply irresistible. Thanks to the hidden brownies, it is not only delicious, but also a visual highlight. Perfect for all chocolate lovers and a great gift for Easter brunch!

Ingredients (17 ingredients)

  • 75 g Butter melted
  • 125 g Sugar
  • 50 g Baking cocoa
  • 1 Prise(n) Salt
  • 150 g Flour
  • 1 tsp Baking powder
  • 120 ml Water or milk
  • 200 g Chocolate chips
  • 125 g Butter very soft
  • 2 piece Egg(s)
  • 100 g Sugar
  • 1 tsp Vanilla extract
  • 200 g Flour
  • 0.5 Pck. Baking powder
  • 1 Prise(n) Salt
  • 80 ml Milk

Preparation (5 steps)

Melt butter and prepare dough

Thermomix® Setting
3 min/122°F/Speed 1, 2 min/Speed 3, 30 sec/Speed 3, 30 sec/Speed 3, 1 min/Speed 4, 20 sec/Linkslauf Speed 2 50 Reverse

Put 75 g butter into the mixing bowl and melt for 3 min./50°C/speed 1. Add 125 g sugar, 50 g baking cocoa and 1 pinch of salt and stir for 2 min./speed 3. Add 2 eggs one after the other and stir in for 30 sec./speed 3 each. Add 120 ml water or milk and stir for 30 sec./speed 3. Add 150 g flour and 1 tsp baking powder and stir in for 1 min./speed 4. Add 200 g chocolate chips and fold in for 20 sec./reverse rotation speed 2.

Bake brownie dough

Pour the dough into a greased brownie tin (approx. 20 cm x 20 cm) and smooth it out. Preheat the oven to 180 °C top/bottom heat. Bake the dough on the middle rack for 20 - 22 minutes.

Cut out brownies

Cut out the still hot brownie directly with a bunny cutter.

Prepare light dough

Put 125 g very soft butter, 100 g sugar and 1 tsp vanilla extract into the mixing bowl and stir for 2 min./speed 4. Add 2 eggs individually and stir in for 30 sec./speed 3 each. Add 200 g flour, 0.5 pack baking powder and 1 pinch of salt and stir in for 1 min./speed 4. Add 80 ml milk and stir for 30 sec./speed 3. If the dough is too dry, add a little more milk.

Shape and bake cake

Spread a small part of the light dough into a greased 25 loaf pan. Place the cut-out brownie bunnies close together in the middle of the light dough. Carefully spread the remaining light dough over it. Bake the cake in the still hot oven for about 40 minutes on the middle rack.

This chocolate brownie surprise cake has become a permanent fixture in our family's Easter celebrations. It all started a few years ago when I was looking for a way to spice up the classic brownies and bake a cake that also looked the part. The idea with the hidden brownies then came to me spontaneously and since then this cake has been the star on our Easter table. The list of ingredients may seem a bit long at first glance, but each component contributes to the overall result. The brownies, with their intense chocolate flavor, form the heart of the cake. The baking cocoa provides a deep, dark color and a strong aroma, while the chocolate chips provide additional chocolate pieces and an extra chocolate kick. The light dough, with its delicate vanilla aroma, forms a nice contrast to the brownies and ensures a loose, juicy texture. The butter, both in the brownie and in the light dough, is crucial for the juiciness and taste. When preparing in the Thermomix®, it is important to really melt the butter for the brownie dough so that it combines well with the other ingredients. Be sure to add the eggs one at a time and stir well to obtain a homogeneous mass. When folding in the chocolate chips, the reverse rotation is important so that the chips are not crushed. For the light dough, it is important that the butter is very soft so that it can be mixed well with the sugar. If the dough seems too dry, you can carefully add a little more milk until it has the right consistency. If you want to prepare the cake vegetarian, you can simply make sure that the chocolate chips used are vegetarian. For a vegan version, the eggs and butter would have to be replaced with vegan alternatives. There are now many good products on the market that are suitable for baking. In terms of taste, the cake can also be varied wonderfully. A little cinnamon or cardamom in the light dough gives it a Christmas touch, while some grated orange peel provides a fruity freshness. It is best to serve the cake lukewarm or cooled. A scoop of vanilla ice cream or a dollop of whipped cream goes perfectly with it. Fresh berries, such as strawberries or raspberries, also harmonize wonderfully with the chocolate taste. The cake will keep, well packaged, in the refrigerator for a few days. It can also be prepared well. The brownies can be baked and cut out the day before. However, you should prepare the light dough shortly before baking so that it does not lose volume.
