Description

This salad with baked vegetables is an absolute highlight, especially in autumn! The combination of warm, slightly caramelized vegetables and fresh salad is simply unbeatable. I love how the sweetness of the maple syrup harmonizes perfectly with the spiciness of the ajvar. The recipe is super variable - depending on the season and taste you can exchange the vegetables. This salad is always well received by me, whether as a main course or as a side dish. And the best thing: It is prepared in no time!

Ingredients (12 ingredients)

  • 1 Kopf Romaine lettuce
  • 5 piece Potato(es)
  • 4 piece Carrot(s)
  • 300 g Green beans
  • 1 piece Onion(s), red
  • 1 tsp Paprika powder
  • 1 tsp Garlic powder
  • 1 Prise(n) Salt
  • 1 Prise(n) Pepper
  • 1 tbsp Mustard, medium hot
  • 1 tbsp Ajvar
  • 1 tbsp Maple syrup

Preparation (8 steps)

Preheat oven

Preheat the oven to 190 °C circulating air and line 2 baking trays with baking paper.

Prepare potatoes and carrots

Cut 5 medium-sized potatoes and 4 large carrots into coarse pieces and place in a bowl. Add 1 tsp paprika powder, 1 tsp garlic powder and a pinch of salt and pepper and mix everything thoroughly. Spread the vegetable cubes on a baking tray so that they do not lie on top of each other.

Bake potatoes and carrots

Slide the baking tray with the potatoes and carrots into the preheated oven and bake for approx. 25 minutes.

Prepare green beans and onion

Place 300 g green beans (slightly thawed, if frozen) and 1 coarsely chopped red onion in a bowl. Season with paprika powder, garlic powder, salt and pepper and mix well. Spread on a second baking tray.

Bake green beans and onion

Slide the baking tray with the green beans and onions into the oven approx. 10 minutes after the potatoes and carrots and bake for approx. 15-20 minutes until the vegetables are lightly browned.

Prepare salad

In the meantime, coarsely chop 1 head of romaine lettuce and place in a large bowl.

Prepare dressing

Mix 1 tbsp, heaped mustard, 1 tbsp, heaped ajvar and 1 tbsp, heaped maple syrup in a small bowl.

Arrange salad

Remove the baked vegetables from the oven and place on the salad. Garnish with the dressing and serve preferably warm.
