Description

This couscous salad is a real all-rounder! I especially like to make it in the summer because it is so light and refreshing. The recipe is super easy and quick to prepare, perfect if you need something quick. The couscous is combined with crunchy vegetables such as peppers and spring onions and refined with a spicy soy sauce-curry dressing. If you like it a little spicier, you can add some chili powder. The salad is ideal as a side dish for barbecues, as a light lunch or as a gift for parties. And the best part: it's also vegan!

Ingredients (18 ingredients)

  • 250 g Couscous
  • 250 ml Vegetable broth
  • 1 tbsp Tomato paste
  • 1 piece Bell pepper, red
  • 1 piece Bell pepper, yellow
  • 1 can Corn
  • 4 piece Spring onions
  • 2 tbsp Rice vinegar
  • 3 tbsp Olive oil
  • 1 tbsp Curry paste, red, vegan
  • 1 tbsp Soy sauce
  • to taste Salt
  • to taste Pepper
  • to taste Chili powder
  • to taste Cumin
  • to taste Sugar
  • Parsley, smooth
  • Chive rolls

Preparation (6 steps)

Prepare vegetable broth

Thermomix® Setting
5 min/212°F/Speed 1 100

Put 250 ml of water in the mixing bowl and heat for 5 min./100°C/speed 1. Add half a teaspoon of vegetable broth powder and stir for 10 sec./speed 3.

Prepare couscous

Pour the prepared vegetable stock over 250 g of couscous and let it steep for 10 minutes. If necessary, adjust the amount of liquid to the manufacturer's instructions.

Prepare vegetables

Wash 1 red and 1 yellow bell pepper and 4 spring onions and cut into small pieces. Drain a can of corn.

Prepare dressing

Thermomix® Setting
10 sec/Speed 3

Put 2 tbsp rice vinegar, 3 tbsp oil, 1 tbsp curry paste, 1 tbsp soy sauce, salt, pepper, chili powder, cumin and some sugar in the mixing bowl and stir for 10 sec./speed 3.

Mix salad

Put the couscous in a large bowl. Pour the dressing from the mixing bowl over the couscous and mix well. Add the prepared vegetables and corn and mix everything well. Season with salt, pepper, chili powder, cumin and some sugar.

Refine salad

Wash some smooth parsley and chive rolls or onion leek green rings, chop finely and sprinkle over the salad.
