Description

This Emmentaler-Pineapple-Salad with Almonds is a refreshing and quick treat, perfect for warm days or as a side dish for grilling. The combination of spicy cheese, sweet pineapple and crunchy almonds is simply irresistible. I often make this salad when I need something quick and it is always well received. The preparation is very simple and the Thermomix® helps to process the ingredients optimally. A great recipe for those who like it uncomplicated and delicious! It is vegetarian and can be prepared well.

Ingredients (9 ingredients)

  • 250 g Emmentaler cheese
  • 300 g Pineapple in slices (from can)
  • 100 g Almonds in slivers
  • 150 g Crème fraîche
  • 1.5 tbsp Lemon juice
  • to taste Salt
  • to taste Pepper from the mill
  • to taste Cayenne pepper
  • Pineapple juice

Preparation (6 steps)

Roast almonds

Roast the almond slivers in a pan without fat until golden brown and then let them cool. Please carry out this step outside the Thermomix®.

Chop cheese

Thermomix® Setting
5 sec/Speed 5

Place 250 g Emmentaler cheese in pieces in the mixing bowl and chop for 5 sec./speed 5. Then transfer.

Chop pineapple

Thermomix® Setting
3 sec/Speed 4

Add 300 g pineapple in slices (from the can), drained, to the mixing bowl and chop for 3 sec./speed 4. Then add to the cheese.

Prepare dressing

Thermomix® Setting
10 sec/Speed 3

Add 150 g crème fraîche, 1.5 tbsp lemon juice, salt, pepper from the mill, cayenne pepper and some pineapple juice to the mixing bowl and mix for 10 sec./speed 3.

Mix salad

Put the chopped cheese and pineapple in a bowl, add the dressing and mix carefully.

Arrange and serve

Wash and drain the lettuce leaves, then arrange on a plate. Arrange the cheese and pineapple salad on top. Sprinkle with the roasted almonds and serve.
