Description

This bean salad is a real treat and brings Mediterranean flair to the table! The combination of different types of beans, sun-ripened tomatoes and fresh herbs is simply unbeatable. The creamy herb tzatziki perfectly rounds off the dish. I especially like to make this salad in summer when the ingredients are fresh from the market. It is rich in protein and fiber, so it's a great, light meal. It can also be prepared and taken along - ideal for a picnic or a light lunch. An absolute favorite recipe!

Ingredients (16 ingredients)

  • 50 g white beans (dried)
  • 2 clove Garlic
  • 100 g green beans
  • 50 g Sugar snap peas
  • 50 g shelled broad beans
  • 30 g Olives
  • 0.5 piece Cucumber
  • 0.5 piece red Onion
  • 1 Bd. Savory
  • fresh Mint
  • Olive oil
  • 1.5 tsp Balsamic vinegar (white)
  • Pepper
  • 100 g Soy yogurt natural (unsweetened)
  • Salt
  • Lemon juice

Preparation (7 steps)

Chop garlic

Put a clove of garlic in the mixing bowl and chop for 3 sec./speed 7. Scrape down the sides with the spatula.

Soak and cook beans

45 min/212°F/Speed 1 100

Soak the chopped clove of garlic and 50 g white beans (dried) in water overnight. The next day, put the soaking water with the beans into the mixing bowl and cook for 45 min./100°C/speed 1. Do not salt the water, otherwise the beans will become mushy.

Prepare and cook beans and sugar snap peas

Clean and wash 100 g green beans and 50 g sugar snap peas. Cook 50 g shelled broad beans, the green beans and the sugar snap peas one after the other in salted water in a separate saucepan until al dente and quench in cold water.

Prepare tomatoes

Cut a cross on the underside of the tomatoes and boil them in salted water for about 10 seconds so that the skin comes off. Peel off the skin and cut the tomatoes into eighths.

Prepare olives, cucumber and onion

Cut 30 g olives into cubes or rings. Peel 0.5 cucumber and chop with a grater. Peel 0.5 red onion and cut into fine strips.

Mix salad

Cut the green beans into equally sized pieces and the sugar snap peas into fine strips. Mix all the beans, sugar snap peas, tomatoes and olives together. Finely chop 1 bunch of savory and fresh mint and add. Season with olive oil, 1.5 tsp balsamic vinegar (white), pepper and 2 splashes of lemon juice.

Prepare tzatziki

Lightly salt the grated cucumber and mix with 100 g soy yogurt natural (unsweetened). Put a clove of garlic in the mixing bowl and chop for 3 sec./speed 7. Scrape down the sides with the spatula. Then season the yogurt with the chopped garlic, fresh lemon juice, salt and pepper.
