Prepare potatoes, peppers, cucumber and spring onions

Cut cooked potatoes, red bell pepper, cucumber and spring onions into small cubes and place in a bowl.

Prepare dressing

Put mustard, sour cream/thick cream, herb vinegar, sugar, salt and pepper in the mixing bowl.

Mix dressing
