Description

This penne salad with chicken and basil is a refreshing and flavorful summer dish. I love preparing it for a quick lunch or a sunny picnic. Grilled chicken, juicy tomatoes, and fresh basil go wonderfully with the pasta. The lemon and olive oil vinaigrette brings an irresistible touch of freshness. It's a simple and adaptable recipe: you can easily add other vegetables like cucumbers or peppers. A real treat for the taste buds and a great way to enjoy seasonal produce!

Ingredients (10 ingredients)

  • 400 g Penne
  • 2 piece Chicken scallop
  • 1 piece Tomato
  • 2 c. à soupe Grated parmesan
  • 1 bouquet Basil
  • 0.5 piece Lemon juice
  • 4 c. à soupe Olive oil
  • 1 c. à soupe Balsamic vinegar
  • Salt
  • Pepper

Preparation (4 steps)

Cooking the penne

Thermomix® Setting
10 min/212°F/Speed 1 100

Fill the Thermomix bowl with 1 liter of water and add a pinch of salt. Program 10 Min./100°C/Stufe 1. Add the 400g of penne and cook according to the time indicated on the packaging, making sure they are "al dente". Drain the pasta and rinse it in cold water to stop the cooking. Set aside.

Preparation of the chicken

Cut the 2 chicken scallops into strips. Salt and pepper. Grill the chicken strips in a pan with 1 tbsp of olive oil until cooked and golden brown. Set aside.

Preparation of the vinaigrette

Wash and cut the 1 tomato into small dice. Sort and wash half of the 1 bunch of basil, then chop it. In a bowl, mix 4 tbsp of olive oil, 1 tbsp of balsamic vinegar, 0.5 lemon juice, salt, pepper and chopped basil. Mix well.

Assembly of the salad

In a large salad bowl, mix the cooked and cooled pasta, the grilled chicken strips, the remaining whole basil leaves, 2 tbsp of grated parmesan, the diced tomato and the vinaigrette. Mix gently to coat all ingredients well.
