Description

This curried chicken salad is a delightful twist on a classic. I've been making it for years, and it's always a hit at picnics and potlucks. The combination of creamy mayonnaise, fragrant curry powder, sweet mango chutney, and juicy sultanas creates a symphony of flavors that's simply irresistible. It's incredibly easy to prepare, making it perfect for a quick lunch or a light dinner. Feel free to adjust the amount of curry powder to your liking – I sometimes add a pinch of chili flakes for an extra kick! This salad is also great served in sandwiches or lettuce wraps for a low-carb option.

Ingredients (6 ingredients)

  • 6 tbsp mayonnaise
  • 2 tsp mild curry powder
  • 0.5 tsp ground cinnamon
  • 2 tbsp mango chutney
  • 1 tbsp sultanas
  • 500 g shredded cooked chicken

Mixing the Sauce

Thermomix® Setting
10 sec/Speed 3

Add 6 tbsp mayonnaise, 2 tsp mild curry powder, ½ tsp ground cinnamon, 2 tbsp mango chutney, and 1 tbsp sultanas to the mixing bowl. Season with black pepper to taste. Mix for 10 Sec./Stufe 3.

Combining Chicken and Sauce

Thermomix® Setting
15 sec/Linkslauf Speed 2 Reverse

Add 500g shredded cooked chicken to the mixing bowl. Mix for 15 Sek./Linkslauf Stufe 2 to coat the chicken in the sauce. If the mixture is too thick, add 2 tbsp water and mix for another 5 Sek./Linkslauf Stufe 2.
