Description

This Greek salad with chicken breast is a light and protein-rich main course, ideal for the summer. The combination of fresh vegetables, feta and fried chicken breast makes it a healthy and satisfying meal. Preparation takes about 35 minutes and is enough for 2 servings. Perfect for a quick and easy meal after a workout or as a light dinner.

Ingredients (20 ingredients)

  • 2 Stück Chicken breast fillet
  • 0.5 Stück red onion
  • 1 Zehe Garlic
  • 2 EL Olive oil
  • 1 EL Tomato paste
  • 400 g Sieved tomatoes
  • 0.5 TL Salt
  • 0.25 TL Pepper
  • 0.5 TL Oregano
  • 1 Prise Sugar
  • 1 EL Balsamic vinegar
  • 3 EL Olive oil
  • 2 EL Balsamic vinegar
  • 0.5 TL Salt
  • 0.25 TL Pepper
  • 0.5 TL Mustard
  • 0.5 Stück Cucumber
  • 1 Stück Red bell pepper
  • 200 g Cherry tomatoes
  • 100 g Feta

Preparation (8 steps)

Chop onion and garlic

Add 1/2 peeled red onion and 1 clove of garlic to the mixing bowl and chop for 3 sec./level 5. If necessary, use the spatula to push down from the edge.

Sauté onion and garlic

Add 2 tbsp olive oil to the chopped onions and garlic in the mixing bowl and sauté for 3 min./120°C/level 1.

Add tomato paste and sauté briefly

Add 1 tbsp tomato paste and sauté for 1 min./120°C/level 1.

Add sieved tomatoes and spices

Add 400 g sieved tomatoes, 1/2 tsp salt, 1/4 tsp pepper, 1/2 tsp oregano, 1 pinch of sugar and 1 tbsp balsamic vinegar to the mixing bowl and cook for 10 min./100°C/level 1. Leave the measuring cup on.

Prepare salad dressing

In a small bowl, whisk together 3 tbsp olive oil, 2 tbsp balsamic vinegar, 1/2 tsp salt, 1/4 tsp pepper and 1/2 tsp mustard with a fork. Alternatively, the dressing can also be prepared in the mixing bowl: Add all ingredients to the mixing bowl and mix for 10 sec./level 3.

Fry chicken breast

Season the 2 chicken breast fillets with salt and pepper. Then fry in a separate pan with a little oil until golden brown and then cut into slices.

Arrange the salad

Wash 1/2 cucumber, 1 red bell pepper and 200 g cherry tomatoes and cut into bite-sized pieces. Dice 100 g feta. Mix the lettuce, cucumber, pepper, cherry tomatoes and feta in a bowl. Add the salad dressing and mix well.

Add tomato sauce and chicken

Pour the tomato sauce from the mixing bowl over the salad. Arrange the fried chicken breast slices on top and serve.
