Description

These salmon crêpe rolls are a delicious finger food or an elegant appetizer. The crêpes are spread with a creamy filling of crème fraîche, basil and lemon juice, topped with smoked salmon and rocket, and rolled up. Ideal for brunch or festive occasions, preparation takes about 90 minutes and yields 6 servings.

Ingredients (15 ingredients)

  • 30 g Butter
  • 120 g Flour
  • nach Geschmack Salt
  • 250 ml Milk
  • 2 Stück Eggs
  • 0.5 Bund Basil
  • 0.5 Bund Rocket
  • 150 g Crème fraîche
  • 1 EL freshly squeezed Lemon juice
  • 0.25 TL Sugar
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • nach Geschmack Chili powder
  • 12 Scheiben Smoked salmon
  • Olive oil

Preparation (6 steps)

Prepare crêpe dough

Thermomix® Setting
3 min/122°F/Speed 1, 30 sec/Speed 3 122°F

Put 30 g of butter in the mixing bowl and melt for 3 min./50°C/speed 1. Add 120 g flour and a pinch of salt. Add 250 ml milk and 2 eggs and stir for 30 sec./speed 3. Let the dough rest covered for 30 minutes.

Prepare basil and rocket

Wash and shake dry ½ bunch of basil and rocket each. Pluck off the basil leaves and finely chop, cut off the stems from the rocket, roughly chop the leaves.

Prepare filling

Thermomix® Setting

Put 150 g crème fraîche, basil, 1 tbsp freshly squeezed lemon juice, ¼ tsp sugar, salt, pepper and chili powder in the mixing bowl and stir for 10 sec./speed 3.

Bake crêpes

Heat some olive oil in a coated pan and bake thin crêpes one after the other. Let the finished crêpes cool down.

Top and roll up crêpes

Spread the cooled crêpes with the crème fraîche. Place 12 slices of smoked salmon (approx. 250 g) on top and sprinkle with rocket. Roll up the crêpes tightly and wrap in cling film. Let the rolls rest in the refrigerator for approx. 3 hours.

Serve crêpe rolls

Before serving, cut each roll diagonally into four pieces and serve, possibly arranged on lettuce.
