Description

This dish is a delicious combination of Japanese soba noodles and hearty meatballs with Asian flavors. The meatballs are refined with ginger, onions and a special spice mixture and braised in a sauce of soy sauce, sake and honey. The shiso cress provides a fresh note. I like to make this recipe when I need to be quick, but still want something special on the table. The preparation is straightforward and the result tastes simply fantastic! Perfect for a quick lunch or dinner.

Ingredients (18 ingredients)

  • 1 tbsp Fish sauce
  • 50 ml Soy sauce
  • 50 ml Sake
  • 1 tbsp Rice vinegar
  • 2 tsp liquid Honey
  • 2 cm Ginger
  • 1 piece Onion
  • 300 g Ground beef
  • 1 piece Egg yolk (Gr. M)
  • 1 tbsp Breadcrumbs
  • to taste Salt
  • to taste Pepper
  • 1 tsp Shichimi Togarashi (Japanese spice mixture)
  • 2 tbsp white Sesame
  • 2 tbsp black Sesame
  • 2 tbsp Sesame oil
  • 400 g Soba noodles
  • 1 Beet Shiso cress

Preparation (7 steps)

Prepare sauce

Thermomix® Setting
10 sec/Speed 3

Add 1 tbsp fish sauce, 50 ml soy sauce, 50 ml sake, 1 tbsp rice vinegar and 2 tsp liquid honey to the mixing bowl and stir for 10 sec/level 3.

Chop ginger and onion

Thermomix® Setting
5 sec/Speed 5

Peel 1 piece (approx. 2 cm) of ginger and cut into rough pieces. Peel and quarter 1 onion. Put both in the mixing bowl and chop for 5 sec/level 5.

Prepare ground meat

Thermomix® Setting
20 sec/Speed 4

Add 300 g ground beef, 1 egg yolk (Gr. M), 1 tbsp breadcrumbs, the chopped ginger and onion, salt, pepper, 1 tsp Shichimi Togarashi, 1 tbsp white sesame and 1 tbsp black sesame to the mixing bowl and mix for 20 sec/level 4.

Form meatballs

Remove the ground meat mixture from the mixing bowl and form into small balls.

Fry meatballs and simmer sauce

Heat 2 tbsp sesame oil in a pan. Fry the meatballs vigorously on all sides. Deglaze with the prepared sauce from the mixing bowl and simmer for about 5 minutes.

Cook soba noodles

Cook 400 g soba noodles according to package instructions. Drain and let drain.

Arrange

Add the cooked soba noodles to the meatballs in the sauce and mix. Arrange on plates. Cut 1 patch of shiso cress from the patch and sprinkle over with the remaining white and black sesame.

This recipe for Asian meatballs on soba noodles is a creation that arose from my love for Japanese cuisine and the desire for quick, yet flavorful dishes. I was inspired by various ramen and Izakaya visits and tried to combine the flavors that I appreciate so much there in an everyday dish. The ingredients play a crucial role. The ground beef forms the basis for the meatballs and provides a hearty note. Ginger and onion, finely chopped in the Thermomix®, add sharpness and spice without being too dominant. The soy sauce gives the meatballs a salty depth, while sake and rice vinegar provide a subtle acidity and umami. The honey balances the flavors and provides a light sweetness that harmonizes perfectly with the spiciness of the Shichimi Togarashi. This Japanese spice mixture is a must, as it contains a complex mixture of chili, orange peel, sesame, poppy and algae. The sesame seeds (white and black) give the meatballs a nutty taste and a beautiful texture. The soba noodles, made from buckwheat flour, have an earthy taste that goes well with the hearty meatballs. The shiso cress, with its minty and slightly anise-like aroma, rounds off the dish and provides a fresh note. When preparing in the Thermomix®, it is important not to chop the onion and ginger too finely, as they could burn during frying. Level 5 is ideal here. When mixing the ground meat, make sure not to process the mixture for too long, as it can otherwise become tough. The 20 seconds at level 4 are sufficient. The meatballs should not be too large so that they are cooked quickly and can absorb the sauce well. For a vegetarian version, the ground beef can be replaced with lentils or tofu. Instead of fish sauce, you can use a vegan seasoning sauce. To make the dish vegan, the honey must also be replaced with maple syrup or agave syrup. Instead of Shichimi Togarashi, you can also use other spice mixtures, such as Garam Masala or Ras el Hanout, to give the dish a different flavor. Serve the Asian meatballs on soba noodles warm. A fresh cucumber salad with rice vinegar and sesame oil goes well as a side dish. You can also serve the dish with pickled ginger (Gari) or kimchi. The meatballs can be stored in the refrigerator and are just as delicious the next day. You can also prepare the sauce separately and store it in the refrigerator. However, the soba noodles should be cooked fresh, otherwise they will stick together. For quick preparation, you can also prepare the meatballs and freeze them. If necessary, simply thaw and fry.
