Description

This refined dish of scallops with saffron on a bed of chicory is perfect for a special occasion or an elegant dinner. The sweetness of the scallops goes perfectly with the slight bitterness of the chicory and the delicate scent of saffron. It is a dish that I often prepare for the holiday season, because it is both simple to make and impressive. The touch of fresh cream and lemon brings a smoothness and freshness that perfectly balance the flavors. A real treat for the taste buds!

Ingredients (5 ingredients)

  • 16 piece Scallops
  • 1 packet Saffron
  • 1 piece Lemon
  • 1 c. à soupe Fresh cream
  • 1 piece Chicory

Preparation (4 steps)

Preparation of chicory

Wash the chicory and gently remove the whole leaves. Set aside.

Cooking the scallops

In a hot pan, melt a little fat. Sear the scallops for 1 minute on each side. Keep warm under a sheet of aluminum.

Preparation of saffron sauce

Thermomix® Setting
30 sec/140°F/Speed 2 60

Pour the cooking juice from the scallops into the Thermomix bowl. Add 1 tablespoon of fresh cream, the juice of half a lemon and the saffron. Mix 30 seconds/60°C/Stufe 2.

Plating

Arrange 2 chicory leaves on each plate. Place the scallops on the chicory leaves and coat with a spoonful of saffron sauce.
